There are two kinds of pork bak kwa to choose from: minced pork and sliced pork.

Bak kwa, a Hokkien dialect name which means dried meat in Mandarin, symbolises good luck and fortune. Apart from its usual square shape, retailers also sell them in the form of a “golden coin” — a relatively smaller, round, glistening piece. Those who can take spice can go for the chilli bak kwa as well.
Although bak kwa is commonly made using pork, other meats like chicken, beef and even crocodile meat have been used to suit a variety of tastes and preferences. There are also two kinds of pork bak kwa to choose from: minced pork and sliced pork.
Personally, I prefer minced pork to sliced pork as it is usually a lot softer, which makes it easier to bite and chew. The fat content may be higher, but it adds more flavour to the bak kwa than the leaner and tougher sliced pork.
