Lean & Rich Bakery, a new addition to Singapore’s lively food scene, has just opened at UE Square. This bakery, led by Hong Ui Chang, a former head baker at Tartine Bakery in Seoul, provides high-quality artisanal bread and pastries to the heart of Singapore.
Hong Ui Chang, known for his mastery of sourdough and laminated pastries, hopes to share his love of traditional baking techniques and high-quality ingredients.
The bakery serves a range of classic French viennoiseries, including buttery, flaky croissants and pain au chocolat, as well as tangy sourdough loaves that are fermented to perfection.
Each item is meticulously created, showcasing Hong’s commitment to the art of baking. He also takes inspiration from Tartine which is known for making the best croissants in San Francisco.
The bread recipe at Lean & Rich Bakery is inspired by Tartine where he mixes 4 different types of flour to make the dough.
What distinguishes Lean & Rich Bakery is its emphasis on freshly-made dough daily. The name “Lean” refers to the basic ingredients used to make the “Rich” dough.
They offer basics like Sourdough (S$8 for half a loaf) as well as flavoured croissants like Pistachio Croissants (S$7).
The bakery’s interior is intended to be minimalistic and inviting, creating a welcoming environment in which guests may enjoy freshly-baked pastries and a good cup of Espresso Italiano (S$3.50). The modern yet friendly atmosphere, paired with an assortment of expertly baked pastries, makes it ideal for a quick bite or a leisurely afternoon.
