For a stall that has been around since 1978, you would expect more people to know about it. However, Blanco Court Fresh Fish Soup is hidden in plain sight on the top floor of Beauty World Centre.

What I tried at Blanco Court Fresh Fish Soup

I went for my usual Fried Fish Noodle Soup (S$5.90). As I take the first sip of the hawker fish soup, the broth is light yet rich, the essence of the sea mingling with the warm, comforting notes of ginger and garlic. The clear, aromatic stock coats my mouth, each spoonful offering a delicate balance of umami and subtle sweetness. Well rounded and nothing too rich that screams artificial flavouring.

The first thing I noticed was how big the chunks of fried fish were. I pick up a piece of the fried fish, its crispy golden crust giving way to tender, succulent flesh. The fish’s mild, natural flavour contrasts beautifully with its crunchy exterior, adding a delightful texture to the soup.

The fried fish maintains its crispiness even as it soaks up the broth, providing a satisfying soft crunch with every bite. I would say, however, I am waiting for the day some soup fish stall fries the fish to perfection and serve it separately so that diners can enjoy it on the side and not have a soggy fried fish.

Next, I bite into a piece of Napa Cabbage, its slightly sweet and crunchy texture contrasting beautifully with the softness of the fish. The tomatoes add a burst of tanginess, cutting through the richness of the broth and providing a refreshing lift.

The fresh coriander and spring onions sprinkled on top add a burst of freshness with each bite, their herbal notes lifting the flavours. Though I must say for the purpose of this tasting I had a mouth with coriander. Otherwise, coriander is the bane of my existence.

Occasionally, I reach for the small dish of sliced red chilli in light soy sauce, adding a touch of heat that lingers pleasantly on my palate. Each bite of the soup is a delightful journey through layers of flavour and texture, a perfect harmony of fresh ingredients and skilfull preparation.

Something to note when ordering was how fast they go through the orders – leaving queuing times to a minimum. But with that said, because of this short cooking time, the noodles, albeit al dente, did not soak up the flavour of the broth.

Lastly, is everyone’s favourite, the egg floss. While there is nothing special compared to the ones elsewhere, I love how it just elevates the soup, giving it a deeper flavour layer.

The other variation of this fish soup is the one with Fresh Fish Sliced Soup (S$5.90) and you could also have it without milk added to the soup. Similarly, I am shocked by the size of the Batang fish provided. Firm to the bite, these slices of fish were extremely fresh.

As for the soup, it wasn’t as well-rounded as the milk variation. The clear broth had a more prominent sweetness of the fish followed by the umami flavours of dried shallots. If the flavours of fresh fish is your thing, then this soup would be more pronounced for you.

Final Thoughts

The simplicity and purity of a fish soup are what make it truly special, offering a warm, nourishing comfort that is both satisfying and soul-soothing. Eating this on a rainy day always warms the soul.

While this may not be my favourite fish soup stall, around this neighbourhood this ranks pretty high up on the list, so you have to try it for yourself.
