I have been to Ocean Restaurant twice now and have to concede that the sheer ethereal magic of the experience does not wane. It’s impossible to put into words the majesty of dining with a massive and wondrous seascape mere inches away. While the gorgeous blue of the water bathes the décor in its mesmerising hue, Singapore’s sole underwater fine-dining restaurant regales you with equally tantalising fare.

I am not one to wax lyrical about veggies so it floors me that the dish that my dining partners and I enjoyed the most was the Cauliflower Cream. Essential to the plating is the play of contrasts. Flawless white cauliflower cream is topped by shiny almost-obsidian Oscietra caviar, and flanked by delicately-thin cauliflower slices. The masterpiece is set within a pool of warm squid ink, poured for you at the table. There was couscous, too, but I was too distracted by the lightness of the cream to fully concentrate by then.

Our Lobster Raviolo was as delightful in both appearance and taste. Elevated from a recipe that belonged to the chef’s grandmother, this is lobster ravioli with foie gras topped with (appropriately) Granny Smith apples julienne. The savoury foam pushed this already excellent dish into phenomenal territory.

Ocean at RWS is a place to immerse yourself in, from the underwater ambience to the stellar cuisine. Being here is almost like watching a 3D underwater documentary as massive manta rays and other exquisite marine specimens glide idyllically by. For an unforgettable celebration, get-together or even a proposal, there are few better places anywhere in Singapore.

2. Soi Social

One of the great tragedies of Thai cuisine is that most diners’ experience of it is limited to a very small number of the most popular dishes. With a Michelin Plate under his apron and a hand in a string of fine dining restaurants across the globe, Soi Social’s celebrity Chef Ian Kittichai is poised to change that.

We experienced his mastery through 2 dishes— Long Arm River Prawn (S$44) and Charred Toothfish (S$49 for 180g, S$85 for 350g).

The first is inspired by the famous water prawns of Ayudhya province. Butterflied and grilled shell-side down over charcoal, they are then served with wok-fried riceberry rice, tossed shrimp paste and choo-chee curry. It’s the mildly sweet and salty curry that is the star in the way that it forms the perfect base upon which the flavours of the fresh seafood excel.

The toothfish or Chilean Seabass is served topped with Thai yellow curry and betel leaves. No, not store-bought but grown in their in-house herb garden. Pan-seared until crispy and golden, the fish is complemented flawlessly by the bed of accompanying sauteed seasonal vegetables. We were all surprised that we preferred this dish to even the excellent Long Arm River Prawn.

Our experience at Soi Social at RWS was made extra special by the wonderful team of wait staff. Not only is each of them familiar enough with the menu that they help you make the best choices for your palate but their smiles and demeanour are the perfect representation of the Land of Smiles.

3. Feng Shui Inn

A stalwart of both the RWS dining scene and Cantonese cuisine in Singapore as a whole, Feng Shui Inn was almost certainly going to make it to our list. Most diners come here for the wonderful dim sum, all made fresh in-house.

Others savour the wok hei par excellence of the restaurant’s many renowned stir-fry dishes. Our team had a hard time settling on the ‘best’ but narrowed it down to 2 dishes.

Up first is the Stir-fried Sliced Grouper with Fresh Huai Shan and Luffa (S$52). Considering the name of the restaurant, it’s no surprise that the ingredients, too, are considered auspicious. I lean towards more ‘basic’ vegetables such as peas and corn so it’s quite a testament that I enjoyed this creation so much. Naturally, the grouper dominated flavour-wise and its supremely tender texture contributed to a wonderful mouthfeel.

We felt that it was a virtual tie with the Grilled MB2 Angus Beef Short Rib with Chef Li Special Sauce (S$78). Chef Li, of course, is Feng Shui Inn’s Executive Chef who is regarded as a master of the trade. Here, his specially crafted sauce is designed around the textures and flavours of the meat. It manages to extract the most subtle ones with little effort, showcasing  both the quality of the food and the talents of the chef behind it all.

While the dim sum and double-boiled soups get all the accolades at Feng Shui Inn, do peruse the extensive beverage menu for specialty teas, fine wines and superior champagne when you’re at RWS.

4. Chifa!

Peruvian cuisine isn’t likely to be the first thing you think of when you think of Chinese fusion cooking… and that’s probably because you haven’t experienced Chifa! before. That’s both the name of the restaurant and of Peruvian-Chinese cuisine.

Chifa! is Singapore’s first Peruvian-Chinese restaurant, which is unsurprising. However, after just one meal here on our visit to RWS, we are convinced that it should become a movement.

The man responsible is Chef Ruben Rodrigo. A Peruvian native, he forged his skills at Central, which has been voted the best restaurant in Latin America. We see that pedigree at work with the Charcoal Wagyu Chifero (S$79). This is a gorgeous slab of Australian Striploin Wagyu served theatrically atop burning charcoal. Marinated with Anticucho sauce made of Peruvian chilli, cumin, soy sauce and vinegar, the meat is resplendent with juicy flavour touch by an enticing hint of smokiness.

Oh, the simple sight of the Roasted Chicken a la brasa (S$30 for Half, S$56 for Whole) had me salivating! Its crispy brown skin speckled with an array of Peruvian spices, the chargrilled chicken came exuding a wondrous aroma to announce its entrance. As with the wagyu that preceded it, this dish bore an appetising smokiness from being cooked on a charcoal fire.

It only gets better from there— every order comes with a side of their homemade pickles and banana crackers. I can’t remember the last time I thought 2 sides worked so well to complement the main dish.

5. Table65

I stepped into Table65… why did it look so unique? Then, it hit me— the kitchen islands were in the same space as the dining tables; this RWS restaurant’s commitment to open-concept dining surpasses every other that I’ve been to! The dining tables themselves are long, designed for casual communal dining. However, we discovered that there is more than ample real estate for each diner when they sit down to eat.

With its 1 Michelin star, Table65 already has an established reputation for quality food. Their approach is to reimagine classic European flavours for today, a process that is achieved in the most visually artistic ways that I have seen in a long time.

We saw that firsthand and up-close with the Langoustine. Absolutely stunning as it sits on a bed of spelt risotto, the Langoustine comes poached in duck fat and dressed to the nines in smoked pancetta espuma, oxalis leaf and foie gras mousse. Its crown is puffed wild rice and a dusting of leek ash powder. And yes, it does taste as exotic as it sounds. If there was a dish to savour every moment it delights your tongue, it is this.

It was a tough act for the Veal Tartare to follow, but it did a commendable job. Featuring more colour with red-veined sorrel and saffron-infused sour cream, the pink tartare was given a healthy textural variety with crispy bacon and sourdough croutons. A final bit of pop came from the exquisite Oscietra caviar. The ups and down of pliability and crunch from the ingredients made this dish a sensory wonder of mouthfeel. Lovely.

6. Osia Steak and Seafood Grill

When it comes to cuisine from Down Under on our little red dot, few come recommended more highly than Osia Steak and Seafood Grill. Celebrity Chef Scott Webster personally picks the finest meat and seafood from Australia to showcase at his RWS restaurant. That task is made just that little bit easier with quality wine from the Hunter Valley, Old World wines, and Aussie craft beers to accompany your meal. If you detect that exhilarating smoky aroma, thank Osia’s stone hearth oven.

Perhaps the best way to discover the magic that occurs within that unique cooking space is the Iberico Pork Rack Chop (S$70 for 300g). Left to roam free in the fresh mountain air of the Iberian Peninsula and eat acorns, nuts, olives and nuts straight from the landscape around them, these pigs are highly-regarded the world over. All that good breeding manifests itself in the pork rack chop as extensive marbling. Every morsel we ate was exceptionally juicy and had a unique nutty flavour that left us craving for more.

If marbling is your thing, the Hancock 2GR Wagyu Beef Ribeye (S$185 for 200g) offers even more. Presented on a flat black square plate that resembles stone, this slab of ribeye seems to hark back to more primitive times. It is prepared over an open charcoal flame that accounts for its smoky flavour. However, it’s the rich and buttery essence of the wagyu that dominates, made tender and juicy as the fat melts.

We didn’t get to try it on the day but the Humpty Doo Barramundi grilled to perfection has been garnering rave reviews for this RWS restaurant, too.

7. Syun

Syun is one of the fine-dining landmarks at RWS and the only one that specialises in Japanese cuisine. It has maintained and built upon its iconic status over almost a decade now and continues to regale us with the signature culinary creations of award-winning celebrity chef Hal Yamashita.

Chef Yamashita embodies a very unique interpretation of fusion, one that he calls Japanese-Japanese. It’s his way of uniting everyday ingredients with premium produce imported from Japan, as well as combining the best of regional dishes from geographically distinct Japanese provinces.

Our introduction to his culinary sorcery was in the form of the Kagoshima A4 Wagyu Beef and Sea Urchin rolls topped with Beluga Caviar (S$38 for 2 pcs). With the best of beef meeting the best of caviar, this dish certainly doesn’t skimp on quality ingredients. I found the opulence of the Beluga caviar melded seamlessly with the creaminess of the sea urchin and the buttery smoothness of the wagyu.

Add to that the variety of textures that enrich this dish and you have a hands-down winner.

With his eponymous Hal Yamashita Tokyo Premium Mini Beef Curry (S$18), our talented chef brings to Singapore a dish that has won him numerous accolades over the course of his career. Soaking in the exquisite savoury curry sauce were some of the most tender bits of premium beef. It’s not just premium meat but top grade Hida beef from Gifu Prefecture and Omi beef from Shiga Prefecture.

It all comes together in what is veritable culinary art that entices both the eyes and the palate. Hal Yamashita, the master and creator of nouvelle Japanese cuisine isn’t out of ideas yet!
