This hearty soup couldn’t be simpler to put together. For this Chinese soup, we used organically grown chicken as they contain lesser fat and is lower in cholesterol. When preparing a meal for the family, it is always reassuring to know that not only would the soup taste great, it is also nutritious to eat.

The Snow Fungus Chicken soup is also popular among the Chinese for its healing and nourishing benefits. Not only does it boost general well-being, but the snow fungus is also known to heal dry coughs, clear heat in the lungs and improve skin complexion. It doesn’t have any flavour, but it does add a “crunchy” gelatinous texture to the soup!
Here's a tip on removing the steam of the snow fungus after soaking it in hot water
Here are some tips to prepare the snow fungus before cooking. Soak the snow fungus in hot water till it softens. Remove the steam on the underside of the snow fungus as it remains firm even after soaking. Cut into smaller pieces and set aside for cooking.
Allow the soup to simmer for 1.5hours till the chicken is cooked through
Follow these simple steps for a comforting chicken soup that you’ll make again and again! Firstly, boil water at high temperature and when it boils, place all ingredients into the pot. Next, when the water boils, reduce the fire. Allow it to simmer for 1.5hours till the chicken is cooked through. Lastly, add in your desired amount of salt and pepper. Let it simmer till the salt and pepper have dissolved and then serve.

Snow Fungus Chicken Soup

Ingredients
1pkt Kee Song Lacto Chicken leg with bones
4pcs red dates
2tbsp Wolf berries
1floret snow fungus
20g dried scallop
2l water
½tsp salt
½tsp pepper
Instructions
Prepare the snow fungus, mushroom and red dates
Soak the snow fungus and mushroom in hot water for 15 mins. Snow fungus: Using a pair of scissors, remove the stem of the snow fungus and cut into smaller pieces. Mushroom: Use a scissor to remove the stem, cut it into strips. Red dates: Use a scissor and slit the red dates into 4. #Tips: This will allow the flavours to be released while it cooked
Cook the soup
Boil 2L water on high temperature in a pot. Once it starts to boil, add in all the ingredients, except for the seasoning.
Once the water starts to boil, reduce the fire and let it simmer for 1.5 hr till the chicken is fully cooked through.
Monitor the water level as you cook. Add in more water to ensure that the ingredients are fully cooked through.
Season the soup and serve
Add in the seasoning and let the soup simmer for a while to ensure that seasoning is dissolved. Serve hot.
