The Bar at 15 Stamford launches their new cocktail menu, 'Chord', with music-inspired offerings. Initially known for its extensive range of rum varieties, the bar's new menu has reinvented itself and features cocktails split into four distinct musical eras—soul, Rock 'N' Roll, the Millennium, and Classics.

Led by Bar Manager Edriane Lim, each libation in the 'Chord' menu tells a story, echoing the music that defined its era. Expect deep, complex flavours of the Soul era to the rebellious spirit of Rock 'N' Roll, and the modern twists on classics in the Millennium.

Highlights include the RUM-OES FIZZ and TONY MANERO from the Soul era, the bold SMOKE ON THE WATER and velvety SIMPLY BROWN from Rock 'N' Roll, and the refreshing AMERICAN PIE and decadently sweet SUGAR from the Millennium, and more.

Together with the new cocktail menu, The Bar is also launching a newly revamped bar snack menu to complement the experience. New bites include the Tiger Prawn Cocktail, freshly shucked oysters, Steamed Spring Bay Blue Mussels in a delicious red curry sauce, and the crowd-favourite Black Angus Beef Sliders.

Las Palmas

Two years after its grand opening, Las Palmas, the rooftop hangout, is elevating its game to solidify its position as the ultimate urban oasis. Starting March 23, 2024, prepare for an exciting new lineup of cocktails meticulously crafted by Head Bartender Ron Aransay, drawing inspiration from the glitz and glamour of 60s Hollywood. But that's just the beginning – they've also curated a series of weekly promotions, complemented by a selection of classic poolside bites infused with an Asian flair, offering a delightful escape from the monotony of everyday life.

Delving into the revamped cocktail menu, you'll embark on a journey through four distinct worlds: Modernist, Vinyl, Hollywood, and Getaway. Featuring 12 fresh creations alongside four timeless classics, each beverage is a narrative unto itself, crafted with premium spirits, tropical infusions, house-made syrups, and unique distillations. Whether you seek a refreshing poolside sip or a bold, spirit-forward blend to unwind after a long day, Las Palmas has something to suit every palate.

Among the signature offerings, immerse yourself in the tropical allure of the Donn Beach – a delightful fusion of white rum, Calpis, hazelnut, and orgeat, transporting you to exotic shores reminiscent of a classic Mai Tai. Alternatively, indulge in the Nifty Fifties, where aged Japanese whisky meets Brazilian Cachaça and pink dragonfruit, accompanied by a whimsical rice paper emblem paying homage to the vibrant advertising of the '60s.

Complementing your cocktail experience, savor mouthwatering sharing plates of beloved American classics such as saucy baby back ribs, available in smoky barbecue or locally-inspired chili flavors, or tantalize your taste buds with satisfying sliders and sides like the Mac Me Happy – a tantalizing blue cheese twist on the classic mac and cheese.

Roku Gin Sakura Blossom

Roku Gin always has something special going on during Spring. This time around, enter the Roku Sakura Bloom edition. Taking inspiration from the ephemeral beauty of cherry blossom, this limited-edition bottling is the first in a series celebrating Japanese festivals inspired by “Shun”—the sensibility of enjoying seasonal moments at their peak.

The blossom imparts an elegant floral taste layered with hints of saltiness, underpinned by a delicately complex blend of botanicals that enhances this Japanese gin’s natural flavours. But it's not all floral, as one would expect. Our favourite was pairing it with a tonic – the classic G&T brought out the juniper-forward fragrance but tempered it with a bright and fresh end.

To celebrate the season, expect tie-ups with Janice Wong for a Janice Wong x Roku Gin Sakura Bloom Edition Hamper; and Maison G21, where guests who purchase all three cocktails will receive a complimentary 2.1ml exclusive spring scent - the Roku x Maison 21G "Spring Kaze".

Not only that, Roku Gin Sakura Bloom will also be available in different cocktail forms at 20 bars, such as Antidote, Mixology Salon, Spectre, Manhattan, Live Twice, MO Bar, Stay Gold Flamingo, Underdog Inn, Smoke & Mirrors and more.

Martell Single Cru

Martell Single Cru collection (Photo: Martell)

Maison Martell launched the Single Cru collection in Singapore in the first week of April. The launch of this collection is an important landmark in the 300-year history of Maison Martell in that, for the first time, every cognac in the collection is crafted with eaux-de-vie sourced from a single terroir.

A quick history leading up to this collection first. Jean Martell, who founded Maison Martell in 1715, was known for his deep connection and knowledge of the terroir. He took a keen interest in eaux-de-vie (notably the different crus, with their specific aromas and potential for ageing) at a time when cognac-making was still in its infancy, and more than a century before the first maps of the region’s crus were drawn up. Inspired by his innovative vision, generations of Martell Cellar Masters have showcased a unique savoir-faire of the Cognac terroir, an expertise that culminates in the Martell Single Cru collection, created by the House’s ninth Cellar Master, Christophe Valtaud.

Now, with the release of this latest Single Cru collection, the Maison is revealing the distinctive taste and unique personality of each individual terroir.

The exclusive new releases are split into three collections, and they are going to be available in limited quantities.

Double-matured in two different types of oaks – new oak for the first maturation and old oak for the second – this unique process gives the new St-Rémy Signature an opening of spiced notes, giving indulgence, youth, and vivacity. It is then followed by the roundness, balance, and sweetness of aged oak.

On the nose, expect a sweet aroma composed of virgin wood and spices such as vanilla, coconut or almond, and fresh fruits. On the palate, the flavours are round and sweet, virgin woody notes enriched with honey, nut and butter flavours. Fruity aromas start fresh, before becoming candied. Sweet spices bring balance.

From 12 March – 30 April, cocktail enthusiasts who order a St-Rémy Signature cocktail at the five participating bars (Mama Diam, Potato Head Singapore, Qin Bar, Naga House and Brooklyn Bar) will also have the chance to win a Nespresso machine valued at S$249.

Expect a fully circular and sustainable alcohol experience with the Discard Spirits Co spirits, made with food waste that will otherwise be discarded. This food waste also gives the spirits another layer of taste, which these spirits can then impart to cocktails.

  • Discarded Sweet Cascara Vermouth blends cascara, a coffee industry waste product, with alcohol, a sherry-style spirit wine base, and botanicals like cinnamon and wormwood

  • Discarded Banana Peel infuses aged Caribbean rum with discarded banana peels

  • The latest release, Discarded Grape Skin Vodka, utilises discarded Chardonnay grape pomace to create a sustainable vodka with a retained grape flavour

These spirits will be available in Singapore at a later date, the first stop outside of the Scandivanian and European countries.

Glenglassaugh launches rare whiskies

How would you fancy getting your hands on a 48, 49 and 51-year-old rare cask release from Glenglassaugh? A hidden gem on Scotland's northeastern coastline, a rare collection of single casks sit in the coastal warehouse and have been left to mature for over 50 years. Three of the single casks are now available for application to purchase.

According to Rachel Barrie, Master Blender at Glenglassaugh Distillery, "It is extremely rare to find casks which have been left to mature in coastal locations for such a long period of time and our warehouses, perched on cliffs overlooking Sandend Bay, have acted as the custodians of this old and rare liquid for over five decades. These casks give a unique insight into ther nature of whisky making at the distillery before it was closed and capture a moment in time like few other expressions can."
