Pink Coconut — popular Singapore influencer Xiaxue launches pink nasi lemak

What would you classify as a good plate of nasi lemak? Surely, ‘pink coconut rice’ doesn’t immediately come to mind. Yet, that is what popular influencer Xiaxue did on 3 Jan when she dropped an Instagram post announcing her nasi lemak brank: Pink Coconut Nasi Lemak

Instead of a physical storefront, Pink Coconut operates out of a cloud kitchen and the food is sent straight to your doorstep via delivery services. This is thanks to Global Cloud Business (GCB), a virtual F&B creator that Xiaxue is collaborating with. 

As for why Xiaxue specifically ventured into nasi lemak, she explained on the website that she had “always wanted to sell” the titular dish. She even had recipes shared by her family. 

Xiaxue initially sought advice from her secondary school friend, Randall Ang. He is both the founder of GCB and managing director of the BoBo brand of fishballs. 

Instead of just advice, he responded with an offer to work with her. 

After 6 months of collaborative effort, the vibrant pink dish was finalised. For those wondering, the pink hue does not come from food colouring. Like the blue variant that uses butterfly pea and the green from pandan, Pink Cocoonut uses beetroot to dye the rice naturally.

As everything is only available on delivery platforms, prices of the dish may vary when you order. But here’s what you can expect, starting with Pink Coconut’s Original Chicken Wings Nasi Lemak (S$9.90). Aside from the eye-catching pink coconut rice, it comes with two heart-shaped fried fishcakes, original chicken wings and a side of peanuts, ikan billis, sambal chilli, bee hiam and cucumber. 

The heart-shaped fishcakes will be another common staple.

You can order variants like the Prawn Paste Chicken Wings Nasi Lemak (S$9.90), Boneless Chicken Cutlet Nasi Lemak (S$9.90) and Beef Rendang Nasi Lemak (S$12). A Sunny Side Up Egg (S$1.50) can be an add-on for all versions.

One side dish that Pink Coconut highlighted on the website is the Super Star Sambal Petai (S$5.20). Xiaxue calls the mix of chilli, petai beans, shrimp paste, garlic and shallots the “fiery partner” to nasi lemak
