A new eatery is in town and the brainchild of Como Group together with internationally acclaimed chef Massimo Bottura — the architect behind three-Michelin-starred Osteria Francescana in Modena, Italy. At the helm of the kitchen is Executive Chef Alessio Pirozzi, who has been leading the culinary direction of one Michelin-starred Torno Subito in Dubai as Head Chef since 2022.

20 February 2024 marks the debut of Torno Subito’s first Asian flagship in Singapore in partnership with the Como Group. ‘Torno Subito’ means ‘I’ll be right back’ in colloquial Italian. The six-course set menu, CIAO Singapore! (S168++), offers a taste of Torno Subito’s signature dishes, including ‘It’s Not Pasta’ — a cuttlefish and bell pepper stew reimagined as a cold Tagliatelle pasta dish. ‘I Love Pizza’ (S$32++) is one of the standout dishes from the à la carte selection. It is a classic Margherita with a light and airy crust made with Petra, a unique flour milled from top quality wheat grains that imbues the aromatic crust with a distinct texture. Another highlight not to be missed is the Tiramisubito (S$18++). The iconic sweet treat offers a playful invitation to crack its espresso-infused chocolate shell with a spoon to reveal rich, creamy layers of the classic Italian tiramisu.

‘I have always admired Massimo,’ says the COMO Group founder, Christina Ong; ‘He is quite simply one of the best chefs out of Italy. Talented. Innovative. His food is very warm and grounded. He does things differently, but it always tastes authentically Italian.”

In collaboration with MDAS (Muscular Dystrophy Association Singapore) and European restaurant Atout, Roche – a multinational biotech company – brings its Rare & Share Dinner series to Singapore for the first time in support of individuals living with Spinal Muscular Atrophy (SMA), a rare and devastating genetic muscular-wasting disease.

Led by Chef Azrin Rahman, the Rare & Share dinner menu features 4 distinct courses incorporating elements that allow diners to experience first-hand the profound impact of the condition in its early to later stages, conveyed through specially designed weighted spoons and specific preparation methods.

Starting off with an Amuse Bouche Trio boasting a variety of textures that individuals with SMA are able to enjoy in the early stages of the disease, the dinner progresses to a soft and creamy Foie Gras Royale that is easy to swallow before making way for the 24 hour slow cooked Wagyu Oyster Blade that reiterates the round-the-clock care necessary for individuals with SMA. The meal ends off on a sweet note with the Lemon Vacherin Glacé, a delicate dessert signifying hope for access to prompter treatments as well as enshrining the importance of communal care and support for families affected by SMA.

Timed for launch on the rarest day of the year on 29 February 2024, the trio of partners presents a 4-course menu devised by Chefs Azrin Rahman and Patrick Heuberger of Atout, a dining experience emulating real-life challenges individuals with SMA face throughout their daily lives.

Prefer, Asia's first bean-free coffee, is here in Singapore

An alternative coffee revolution is in the works and you can find it in the name of Prefer – Asia’s first bean-free coffee and sustainable bioflavours start-up that leverages fermentation technology to tackle problem crops. Coffee without coffee beans? How is that possible and why is it necessary?

Well, did you know that coffee is getting increasingly expensive no thanks to diminishing farmlands caused by climate change. The transportation costs of beans importation also adds to the cost. Also, the current carbon footprint of coffee is high where one cup of espresso produces an average of 0.28kg carbon footprint.

Asia’s first bean-free grounds are made from upcycled ingredients such as soybean pulp from Mr Bean, spent grains from local breweries and day-old bread from Gardenia. The process of fermenting, roasting and grinding only takes about 48 hours from raw materials vs the years required to cultivate beans. This in turn, eliminates emissions from farming, manufacturing and importing. Starting with bean-free coffee, Prefer has plans to tackle other crop issues in particularly, cacao and vanilla.

At this moment, Prefer is operating on a B2B business model providing bean-free coffee to cafes such as Dough at Chijmes and many others. But who knows, Asia's first bean-free coffee may be found in your home pantry in time to come.
