This Kale, Pear, and Chestnut Salad Is All We Want to Eat Right Now

Here's a salad for the cooler months: simple, sturdy, crunchy, delicious.

The five main ingredients are kale, pears, Parmesan, pomegranate seeds, and chestnuts. Those last ones are what make it so hearty. Dressed in a honey vinaigrette, this is a salad you can make over and over, and never get tired of.

Ingredients

  • 2 tbsp.

    olive oil

  • 2 tbsp.

    champagne vinegar

  • 2 tbsp.

    pure honey

  • 1 tbsp.

    Dijon mustard

  • Kosher salt and freshly ground black pepper

  • 1

    bunch curly kale, stems discarded and leaves torn

  • 1

    (5.2-ounce) package whole peeled and roasted chestnuts, crumbled and warmed

  • 1/2

    pear, sliced

  • 1/3 c.

    pomegranate seeds

  • 1 1/2 oz.

    Parmesan, crumbled (about 1/3 cup)

Directions

  1. Whisk together oil, vinegar, honey, and mustard in a large bowl. Season with salt and pepper. Add kale and toss to coat, then massage dressing into leaves with clean hands. Add chestnuts, pear, pomegranate seeds, and Parmesan and toss to combine. Serve immediately.
