Tuna Cakes on Greens Becky Luigart-Stayner

Go to any upscale seafood restaurant, and you'll likely see some sort of cakes on the menu: salmon cakes, crab cakes, or fish cakes of another kind. They're delicious and—honestly—pretty easy to make.

And, if you use canned tuna, they're also quite affordable! We love serving a couple on a big bed of greens for a light dinner. It's a great way to turn a simple pantry dinner into something a little fancier.

Yields: 4-6 servings

Prep Time: 40 mins

Total Time: 40 mins

Ingredients

  • 2

(12-ounce) cans chunk white tuna, well drained

  • 1

    scallion, finely chopped

  • 1/3 c.

saltine cracker crumbs, plus more if needed

  • 2

    large eggs

  • 1/4 c.

    mayonnaise

  • 1 tbsp.

    Old Bay Seasoning

  • 1/3 c.

    canola oil

  • 1/2 c.

    all-purpose flour

  • Green salad and lemon wedges, for serving

  • Chopped fresh flat-leaf parsley, for garnish

Directions

  1. Combine tuna, scallion, cracker crumbs, eggs, mayonnaise, and Old Bay in a bowl. (Mixture should be moist but not sopping. Add an extra crumbled cracker or two if it's too wet.) Divide into 8 patties.

  2. Heat oil in a large skillet over medium heat. Place flour in a shallow bowl. Coat both sides of each patty in flour. Fry, in batches, turning once, until golden brown and warmed through, 4 to 6 minutes. Transfer to a wire rack to drain.

  3. Serve atop green salad, garnished with parsley with lemon wedges alongside.
