What’s something you can eat every day and never get tired of? I’ll tell you in a heartbeat that mine’s mee hoon kueh.

Mee hoon kueh is essentially handmade flat noodles crafted from a dough of flour and water; call it ban mian’s close cousin if you will! Traditionally, the noodles are painstakingly torn by hand into irregular shapes that give them a rustic, artisanal appeal. When cooked to a perfect al dente, these offer the most incredible QQ mouthfeel.

The labour that goes into traditionally hand-torn mee hoon kueh is intensive, to say the least. Many establishments have thus enlisted the help of machines to shape and cut the noodles instead. Rest assured, though, it retains its firm, chewy bite as long as the dough is freshly made.

Texture aside, one of the things I love most about mee hoon kueh is its versatility. You can enjoy yours in a piping hot bowl of soup, dry-tossed, or with a dash of chilli a la chilli ban mian. This dish is a real crowd-pleaser.

If you’re on the hunt for affordable eats while you’re out shopping in town and have a penchant for mee hoon kueh, Greenview Cafe will help you kill two birds with one stone.

This no-frills eatery, nestled in Far East Plaza, is best known for serving up bowls of delicious hand-torn (!!!) mee hoon kueh. In fact, they’ve been doing exactly that for over 3 decades! The best part? All of their fare is priced at under S$10.

They boast a whopping 10 variations of mee hoon kueh. It wouldn’t be an exaggeration to say that you’ll be spoilt for choice here; I certainly was.

Of all, my favourite had to be the Mala Mee Hoon Kueh (S$9.90). Albeit on the pricier end, it’s as delicious as it is unique. 

Tell me you wouldn’t be charmed by its presentation alone; it looks like a miniature bowl of mala xiang guo, complete with quintessential ingredients like luncheon meat and napa cabbage. The mee hoon kueh ticks off all the right boxes — each irregularly-shaped piece is cooked to a perfect al dente and pairs well with the fiery yet flavourful mala sauce mixture.

Those that crave comfort on a chilly day can opt for the Herbal Mee Hoon Kueh (S$6.80). If familiarity is what you’re looking for, the Dry/Soup Minced Pork Mee Hoon Kueh (S$6) is the undoubted way to go. Whatever you choose, the noodles’ satisfying mouthfeel alone makes it well worth every cent.

霸婆手工面, otherwise known as Madam Tyrant’s Handmade Noodles, is a humble stall with a name that pokes fun at the sternness of grandmothers. It’s a pretty new establishment that opened in Sep 2023 at a coffeeshop in Jalan Besar but relocated to a larger space up north in Midview City in May 2024.

The stall offers a wide variety of comforting dishes that star hand-kneaded noodles such as mee hoon kueh, ban mian and sheng mian. These are cooked using a recipe that belonged to the owner’s grandmother.

Madam Tyrant’s most popular item is the Happy Bowl (S$6.50), which contains multi-coloured mee hoon kueh that has been featured in many social media reels. These hand-torn morsels come in 4 different colours, all achieved through the use of natural ingredients — pumpkin for yellow, sweet potato for purple, spinach for green and beetroot for red. A clever way to get picky young ones to eat their vegetables, huh?

The dish delivers not only on aesthetics but also in flavour and impeccable textures. The silky mee hoon kueh is chewy and soft, perfectly complemented by the savoury minced meat clusters and crunchy ikan bilis. Tying it all together is the creamy and robust soup, with an umami flavour attained through overnight simmering and a special secret ingredient.

While the Happy Bowl certainly isn’t to be missed, feel free to give the regular Soup/Dry Mee Hoon Kueh (S$5/S$5.30) a whirl as well.

Seletar Sheng Mian • Mian Fen Guo has 3 outlets islandwide in Ang Mo Kio, Toa Payoh and Geylang, and perpetual long queues are a regular affair at all of them. Regardless, I gravitate towards their stall at Toa Payoh Lorong 8 Market time and again. Yes, I’d willingly spend half of my lunch break braving the queue because their hand-torn mee hoon kueh is just that good.

The mee hoon kueh here is 100% handmade, from dough that they stretch and knead themselves. The result? Irregularly shaped pieces, some doughier and thicker than others but all around cooked to a perfect al dente — exactly the way I love it.

My go-to order is the Dry Mee Hoon Kueh (S$4/S$5/S$6), which sees the hand-torn noodles tossed in a savoury dark sauce and then topped with fresh prawns, spinach, minced pork and ikan bilis. And, of course, a dollop of chilli paste to give the dish a spicy kick, though it’s a little milder than I prefer.

You can also opt for the Soup Mee Hoon Kueh (S$4/S$5/S$6), in which your noodles are served in a comforting and robust pork bone broth. It’ll warm you right up on a chilly day.

Ah Yi Handmade Noodle • Fish Soup is situated in Marsiling Mall Hawker Centre and has been my regular haunt for mee hoon kueh for years. This humble family-run stall is one of the hawker centre’s most well-known, with their QQ handmade noodles drawing queues regardless of the time of day.

Their Soup/Dry Mee Hoon Kueh (S$4/S$5/S$6) has won the hearts of many noodle fanatics, including some who travel specifically for it.

As it goes for me at most noodle stalls, I usually opt for the Dry version. Each bowl consists of a generous portion of hand-torn mee hoon kueh with minced pork, spinach, some piquant sambal and a tasty sauce to toss the noodles in.

Each piece of mee hoon kueh is shaped and textured differently. They hold a good bite that’s not overly doughy, and is perfectly contrasted by the crunchy ikan bilis and house-made fried shallots.

Ai Chi Mee Hoon Kueh 爱吃面粉粿 sits right next to the famous Ji Ji Wanton Noodle on the upper floor of Hong Lim Market & Food Centre. Their stall front sports a minimalistic signboard inscribed with their name in elegant Chinese calligraphy.

Their menu is straightforward, with just 2 types of mee hoon kueh: Traditional Mee Hoon Kway (S$4.50) and Prawn Paste Mee Hoon Kway (S$5.50). You can swap the mee hoon kueh out for ban mian and you mian, too, but where’s the fun in that? I’m kidding, but you can’t go without trying their titular offering.

I opted for the Traditional Mee Hoon Kway — a simple bowl of hand-torn mee hoon kueh in soup with an egg submerged within, along with the classic fixings of minced meat chunks, shiitake mushroom slices, plenty of spinach and a spoonful of ikan bilis and shallots. The broth was robust and lightly sweet, pairing well with the silky, al dente mee hoon kueh morsels; truly the epitome of comfort.

As someone who prefers having my noodles dry, the Dry Spicy Ban Mian/You Mian (S$5.50) piqued my interest. Sadly, you can’t pair your mee hoon kueh with their dark sauce and chilli concoction. I’ll remain hopeful that the combination will be available one day, though!

Housed in a small food court along River Valley Road, Banting Traditional Cuisine is quite the hidden gem. As the stall’s name suggests, they specialise in handmade noodles cooked the traditional way. Moreover, at the reins of the stall is a passionate couple that hails from Kuala Lumpur; that’s how you know that their fare is legit.

It’s no secret that Malaysian-style chilli ban mian is in a league of its own. With that in mind, I had only one specific order in mind: the Hot & Spicy Noodle (S$6.30), AKA Banting Traditional Cuisine’s rendition of the dish. I had mine with mee hoon kueh, of course.

The mee hoon kueh here came in bigger sheets than I’d seen from elsewhere. Although they weren’t hand-torn, their freshly handmade quality was evident in the chewy, irregular textures. 

The noodles were adorned with a myriad of ingredients, including meatballs, braised minced meat, mani cai, a poached egg and, most interestingly, a golden-brown sheet of crispy fried tau kee. Each component had a hand in elevating each satisfying mouthful of QQ mee hoon kueh in both texture and flavour.

Also, don’t you go underestimating that seemingly tiny helping of chilli, it packed an addictive punch that made the sauce mixture all the better.

There are a variety of other menu items for your perusal, including the classic Soup/Dry Noodle (S$5) and interesting ones like Mala Noodle (S$6) and the Dry Thai Style Noodle (S$6.30), which is only available from Sun to Tue.

Though it’s a relative newcomer, 哥哥家 K Kitchen is a force to be reckoned with. The stall, located in Bendemeer Market & Food Centre, is helmed by a couple equipped with skills from the NEA Hawker Development Programme.

They pride themselves on their signature offering of handmade mee hoon kueh among a variety of 8 different types of noodles such as sheng mian, claypot noodles and ban mian.

The mee hoon kueh here is clearly crafted from homemade dough, evident from the pillowy consistency of each thick sheet. It isn’t overly doughy either, and glides down the throat with ease.

We recommend you pair your mee hoon kueh with their Signature Dry Sauce (S$5.50). The bowl features a medley of ingredients such as pork slices, pork balls, a silky fish dumpling, poached egg, unctuous pork lard and traditional mani cai

Give the bowl a good toss, and you’ll have your noodles coated in the moreish concoction of creamy egg white and flavourful sauce. You won’t need chilli dip to spice it up.

Ah, another stall that offers coloured mee hoon kueh that pleases the eye as much as it does the palate! Tucked away in Old Airport Road Food Centre, Sky JB Mian Fen Kueh serves up handmade pumpkin and spinach mee hoon kueh alongside a variety of noodle choices, including good ol’ handmade ban mian and regular mee hoon kueh. The stall, helmed by a JB-hailing couple, has been around for over a decade.

What better way to get your daily intake of fibre and greens than with a bowl of Spinach Mian Fen Kueh (S$5/S$6) or Pumpkin Mian Fen Kueh (S$5/S$6)? Though the flavours of the respective vegetables aren’t the most discernible, the green- and orange-hued noodles are handmade and possess a great texture and bite.

You can opt to have your mee hoon kueh dry-tossed or in soup. The latter version stars a clean-tasting broth that’s naturally sweet; it’s complemented by slightly bitter mani cai and savoury fishballs. On the other hand, the dry version features a nicely-seasoned sauce mixture that coats the noodles, and is elevated by pork lard bits and ikan bilis that lend it umami and a crunch.

Touted as one of the best handmade noodle stalls in Singapore, Penang Heng Heng Handmade Noodle’s inclusion in this list should not come as much of a surprise to you. This humble stall recently relocated from Geylang to Clementi, and needless to say, loyal devotees followed it on its westward pilgrimage.

Amazing fare aside, the most impressive thing about Penang Heng Heng is that it’s a one-man show. Yes, the uncle single-handedly makes the noodles, takes orders, prepares them and washes the dishes.

The best way to showcase a handmade noodle stall’s prowess would be through its mee hoon kueh, duh. In that vein, you must try Penang Heng Heng’s Dry/Soup Bee Hoon Kuay (S$5)

We recommend the Dry version, where the handmade mee hoon kueh is served in a light sauce, and topped with tasty minced meat, shallots, ikan bilis, pork lard and a poached egg. The combination of QQ noodles, luscious egg yolk and savoury sauce is simply to die for; you’ll wallop the bowl in no time.

If you’d like a fiery kick in your noodles, don’t forget to ask for a saucer (or two) of chilli crisp. Add as much or as little as you want, it’s sure to please either way.

Unless you live under a rock, Jiak Song Mee Hoon Kway should instantly ring a bell. Still, for the uninitiated, it’s a mee hoon kueh-centric hawker stall started by MasterChef Singapore finalist Aaron Wong.

Since its opening in Telok Blangah in 2020, the establishment has gone on to expand to an impressive 8 outlets islandwide. And yes, I personally think that the quality of their mee hoon kueh speaks for their success.

Jiak Song’s menu has a total of 10 items, all of which star their delicious handmade noodles. First, there’s the Signature Mee Hoon Kway (S$5.50) which is topped with minced pork, pork slices, pork ball and shrimp ball. Their other Mee Hoon Kway varieties come with other ingredients such as Seafood (S$6.80), Shabu Shabu (S$5) and Sliced Fish (S$5.80).

Feel free to opt for ban mian if you prefer thinner noodles, or get the Mala (S$5.50) and Tom Yum (S$5.80) varieties if you’d like to spice things up.

My favourite has always been the good ol’ Mee Hoon Kway with Minced Pork, Pork Slices and Pork Ball (S$5) in Soup.

While my love for their handmade mee hoon kueh and its chewy mouthfeel is undeniable, I especially adore the broth it comes in. It’s comforting and robust, and has a wok hei-esque smokiness that lends it a delicious umami flavour; I drain the bowl every single time.

The famous L32 Handmade Noodles from Geylang earns its place on just about every ‘best ban mian in Singapore’ guide, and here it is, equally worthy of the final spot on my mee hoon kueh listicle. Yes, this powerhouse churns out bowls of mee hoon kueh that are as solid as their renowned ban mian.

L32 has a sauce mixture that’s tasty in the most addictive way. That being said, you absolutely must get their Dry Mee Hoon Kueh (from S$5.30).

Each bowl features a pool of that delicious dark sauce beneath a heap of mee hoon kueh pieces, vegetables, ikan bilis, shallots and your choice of protein from the likes of Pork (S$5.30), Meatballs (S$6), Prawn (S$7) and even Razor Clams (S$7.50). It’s accompanied by a bowl of soup with an egg within, and a saucer of aromatic chilli dip to mix into your noodles.

Now, don’t be fooled by the seemingly thin appearance of the mee hoon kueh pieces; they hold quite a substantial bite. There’s no harm in piling your spoon with more either! Give the bowl a thorough toss and there you have it — velvety sheets of mee hoon kueh evenly coated in sauce, their soft chew complemented by the crunch of the vegetables and ikan bilis.
