Young hawkers open authentic wok hei-infused hokkien mee in Ang Mo Kio
Ah Jie Hokkien Mee, known for its authentic Hokkien Mee (S$6), is creating waves with the inauguration of a new shop in Ang Mo Kio. Known for offering one of Singapore’s most traditional dishes, this edition aims to provide the same high-quality, savoury experience that fans have come to expect.
Ah Jie Hokkien Mee has established a great reputation for its rich, flavourful version of the famous Hokkien Mee, a stir-fried noodle dish known for its savoury combination of prawns, squid, and aromatic seafood broth.
Each plate is meticulously balanced with ingredients, ensuring that the noodles are neither too dry nor too soggy and that they are filled with a rich, umami flavour that makes them appealing. With that said, this plate of Hokkien Mee tends towards the wetter side which conveniently suits the kind that I like.
The outlet has a simple and easy-to-understand menu with only 1 dish – that’s also how you know they are good at what they do. No frills, just selling 1 dish, the Hokkien Mee. Diners have all complimented the young hawkers talking highly about how wok hei has been infused into a bowl of thick broth Hokkien Mee.
I also like the addition of pork lard on the top of each plate to give it that extra burst of umami flavour.
All in all, I think that I really like the idea of younger hawkers stepping up to preserve the hawker culture in Singapore for it is a dying trait.
