Woke Ramen serves wok hei seafood mix prawn ramen & chicken chashu collagen ramen

Wok hei is the essence of deliciousness in Asian dishes like char kway teow, fried rice and hor fun just to name a few. I made an hour-long journey to Changi Airport Terminal 1 to visit Woke Ramen, where I was told that I could get wok hei ramen.

If you’ve been living under a rock like me, you would be flabbergasted when you hear of this dish. I’ve heard of wok hei fried porridge and zi char dishes, but never in my life would I have envisioned Japanese ramen broth to fuse together with wok hei Chinese la mian.

The woks are first heated to extremely high temperatures before the la mian noodles are scorched and tossed in it to achieve a delectable smoke-kissed flavour. Thereafter, they are doused in wholesome chicken collagen and sweet prawn broth.

The first bowl of noodles that I tried was the Chicken Chashu Collagen Ramen (S$13.90). The bed of la mian noodles were submerged in a chicken collagen broth, served with slices of chicken chashu, one lava egg, black fungus, and tons of spring onions.

The broth was rich and savoury with whiffs of wok hei aroma exuding from the noodles. The chicken chashu was tender and tasty, and was less fatty than the usual pork version.

Seafood enthusiasts will definitely enjoy the Seafood Mix Prawn Ramen (S$18.90). It consisted of la mian noodles in a robust and sweet seafood broth, prawn paste balls, tiger prawns, scallops, black fungus, onsen egg and spring onions.

Back when I was a chef, lobster bisque was one of the stocks which I regularly prepared for VIP functions. The seafood broth tasted like an exact replica of mine, which indicates that they’d probably simmered it for several hours.

You can also check out their other noodle offerings like Onion Oil Ramen (S$8.90) and spicy Chicken Gyoza Collagen Ramen (S$12.90) (I highly recommend this).
