New in town: Fortuna Singapore — SG’s 1st Sicilian-Neapolitan restaurant lands in Tanjong Pagar

Singapore truly has a vibrant international cuisine scene. Recently, it welcomed a new Italian restaurant— Fortuna Singapore, marking the first Sicilian-Neapolitan restaurant in the country. The eatery has opened its door at Tanjong Pagar, promising a memorable culinary journey through Italian cuisine.

Fortuna Singapore was founded by 3 friends: master pizzaiolo Giorgio Sorce, ranked 87 worldwide; Chef Omar Tutino, who refined his skills under the guidance of esteemed Michelin-starred Masterchef Antonino Cannavacciuolo; and Egon Marzaioli, an extraordinary F&B operator.

Born in Italy, formed in Sydney, famished in Singapore: the restaurant was established by the 3 founders born in Italy; in 2021, they set up their first restaurant— Fortuna Drink & Eat in Sydney. This year, they decided to expand their footprint to Asia, bringing them to Singapore. And we’re all for it!

Begin your gastronomic adventure at Fortuna Singapore with ‘1000’ Layers Lasagna (S$36) with pistachio pesto, béchamel sauce, and Mortadella. This dish is inspired by the chef’s childhood memories, with his mother always making sure every side of the lasagna was crisped to perfection for everyone to enjoy. Such a heartwarming touch!

An outstanding pasta worth trying (and my personal favourite) is Maflade (S$34), featuring 24-hour slow-cooked ragout, burnt Provolone cheese, and Fortuna chilli oil.

It’s impossible to miss their specialty pizza. Here, the dough is left at least 50 hours in fermentation, resulting in an airy crust and a more developed flavour profile. You absolutely must taste the Not Just A 4 Cheeses (S$29 for 22cm, S$40 for 30cm). This pizza features mozzarella, Gorgonzola dolce, Ricotta salata, and Parmesan chips—  a true delight for cheese lovers. If you can only try one pizza, make it this one!

Of course there are other amazing options. There’s the fried and bake series where the dough is lightly fried and then baked to reduce extra oil, leading to extra layer of crunchy texture and flavour. Yum!

Try the Gambero & Starcciata (S$38) featuring Gamberi di Mazzara (shrimp), starcciata, sun-dried tomatoes, pistachio pesto, cured egg yolk, and lemon zest.

The eatery also offers pizza al ruoto, which benefits from triple fermentation to achieve a crunchy skin and soft interior. It is served in 6 slices with flavours like Truffle & Anchovies (S$42), showcasing walnut whipped butter, anchovies, truffle, and lemon zest.

With these standout authentic Italian dishes and a friendly, warm atmosphere (shoutout to the staff!), you’re guaranteed a fabulous time. So add this to your night-out list, pronto!
