New in town: Baba Nyonya — Authentic Peranakan fusion dishes at Changi Terminal 3
If you’re ever doing some shopping around Jewel Changi Airport or are simply picking up your loved ones from the departure gates, perhaps you might want to consider having Baba Nyonya for a meal.
This new Peranakan restaurant first opened its doors on 1 Mar 2023 and is located at Terminal 3.
This new Peranakan restaurant is helmed by Chef Dine who grew up in a Chetti Peranakan household in Melaka, thus exposing him to a fusion of Malay, Chinese and Indian culinary influences. With Baba Nyonya, he aims to make Peranakan food accessible to people outside of the community.
This led to him creating a contemporary take on traditional dishes, with a fusion of different cultures whilst adding his own personal touch.
For those who want to fully experience the multi-faceted display of what Baba Nyonya has to offer, you can opt for the Peranakan Omakase (S$59).
For starters, you’re served the Itik Tim, a doubled boiled pressure-cooked tangy duck soup. This is followed by appetisers which include Tauhu Bakar, Otah Croquette and Nyonya Ah Char.
You’re then served mains which consist of Lor Gu Bak – Braised Beef Brisket, Lemak Chilli Mussels and Nasi Ulam, and finally, a sweet end to your meal with their Tau Sar Piah.
However, Baba Nyonya also carters to a la carte meals with mains such as Buah Keluak Chicken Briyani (S$22.90), Roasted Itik Seo (S$26.90) and Barramundi Asam Pedas (S$28.90).
There are also vegetarian options like the Plant Based Rendang Moussaka (S$26.90) and Mix Mushroom Fettuccine Pasta (S$24.90).
