Step 1: Add the arugula, carrot, white radish, green radish and quinoa to the tray. These wholesome ingredients are a healthy and delicious base for your yu sheng, and are of the utmost freshness. The accompanying phrases to chant are 鸿运当头 (“hong yun dang tou”), 青春常驻 (“qing chun chang zhu”) and 步步高升 (“bu bu gao sheng”).

To make your yu sheng a little fancier, you can consider rolling up the pieces of smoked salmon to create little roses, or you could leave them unrolled as is. As you add the salmon, chant the accompanying phrase, 年年有余 (“nian nian you yu”).

Step 3: Adorn your yu sheng with a pop of colour and sweetness! Add the red sweetened ginger strips, green peach strips, white sour ginger strips and brown cucumber strips to the yu sheng. Step 4: Sprinkle five spice powder, cinnamon powder and pepper powder on top of the yu sheng while saying 招财进宝 (“zhao cai jin bao”).

Step 5: Make the yu sheng extra crunchy with sliced almonds, pumpkin seeds and toasted white sesame. Wish for a prosperous business with 生意兴隆 (“sheng yi xing long”).

Step 6: It’s time for some nutty goodness! Sprinkle in a generous amount of chopped peanuts, meant to symbolise a household filled with gold and silver— 金银满屋 (“jin yin man wu”).

Step 7: Pour in the pok chui crackers to further add some crunch to the yu sheng. 遍地黄金 (“bian di huang jin”) is the accompanying phrase, meaning a floor full of gold.

Step 8: Finally, pour in the ume wafu vinaigrette and squeeze in the calamansi to add an extra pop of flavour to the yu sheng. The accompanying phrase, 甜甜蜜蜜 (“tian tian mi mi”), wishes for a sweet and blissful life.
