Renowned Sichuan chef opens 1st outlet in Singapore with 50% off

The interior is a reflection of the restaurant’s approach to Sichuan food – the marriage of contemporary sensibilities with tradition, and the panda mascot adds a playful touch keeping it casual and lighthearted.

Diners can look forward to a diverse selection of Chef Lam’s famed dishes, more than 20 of which are on the menu. Lam’s Signature Dongpo Pork (S$18.90) is a masterpiece – a meticulous and labour-intensive dish, the pork belly is first simmered and then deep fried to lock in its savoury goodness. It is then braised for 12 hours to allow the meat to fully absorb the pepper-infused sauce, and develop a meltingly tender texture.

Soup lovers (like me!) shouldn’t miss out on Dongpo’s Golden Soup with Pickled Fish (S$29.90). The soup base is made with yellow split peas that are slow-simmered for 6 hours in a rich chicken stock. It is then finished off with premium Sichuan pickled vegetables and delicate slices of fish. Each sip is rich in flavour with an addictive sour tang that will get your mouth watering.

A staple of Sichuan food, Geleshan Laziji (S$23.80) is a classic. CHEFLAM’S rendition uses 3 different chillies, each specially air-flown from Sichuan and Guizhou. This combination gives a unique blend of spice and fragrance. Paired with chicken that’s been fried to perfection to ensure it’s still juicy, this dish is the perfect representation of Sichuan food.
