Miss Kefir Singapore: Bak Kwa Scones Hide A Superfood That Makes It Irresistibly Tasty
At first glance, you may have thought that Miss Kefir is a cheeky way of re-spelling cafe, but little did I know that it’s named after a type of fermented milk made with ‘kefir grains’, that packs a slew of health benefits.
I visited the newly opened shop in Amoy Street with only one goal in mind; to try its Bak Kwa Scones, which is already famous in Kuala Lumpur. I ended up learning so much more about the star ingredient that is oh-so-special.
Baked to golden brown, you could tell that these Bak Kwa Scones ($2.50 per piece / $13 box of six) are homemade fresh every day from its beautifully imperfect crusts and charred bits of bak kwa peeking through the quick-bread’s surface.
The scones are egg-washed to give a light crisp, while revealing a moist core with bits and pieces that crumble easily, enticing you to bite into it quickly.
Unlike its sweet counterparts, these Bak Kwa Scones are both sweet and savoury at the same time, tantalising your taste buds. They are light, slightly fluffy, and generous with the BBQ sweet meat, making every mouthful a delight to munch on.
Introducing the star ingredient that goes into making the bak kwa scones: Kefir. It acts as a rising agent for the scones, and gives a slight acidic, sourish taste, almost like having sour cream to balance out the sweetness, which whets your appetite.
Some benefits of Kefir include boosting immunity; easing bloatedness, gastric acid and acid reflux; regulating bowel movement; binds cancer-causing toxins; reduces allergies; et cetera.
Now, you can binge on these scone without the guilt, because in more ways than one, they are somewhat healthy and nutritious!
Besides the Bak Kwa Scones, the Crunchy Granola Parfait ($3.50) is also one of Miss Kefir’s bestsellers. I was given a small sample size to try and was told that the granola is homemade, using almonds, whole hazelnuts, walnuts and seeds, and baked in-house for that added roasted flavour.
If you’re working around the area and need a mid-day pick-me-up, Miss Kefir will do the trick by offering wholesome snacks when you’re feeling peckish.
Also, the Bak Kwa Scones are great additions to next year’s Chinese New Year goodies, something unique apart from the usual love letters, pineapple tarts and almond biscuits that may or may not be so kind on the waistline.
