Michelin crowns Michael Tusk's Quince with three stars in 2017 San Francisco guide

American chef Michael Tusk, who is particularly active on Instagram (michaeltusk), heads San Francisco's latest three-star restaurant

Michelin has published the 2017 edition of its Red Guide for this most French of American cities. Michael Tusk's Quince is the only restaurant to scoop a three-star rating in the updated guide.

A heavyweight of the US gastronomic scene, San Francisco has confirmed its status as a fine dining hotspot with a new triple Michelin-starred establishment. The Red Guide has honored the cuisine of Michael Tusk, who puts local produce from Northern California at the heart of his culinary creations.

A member of the Relais & Châteaux network, Quince serves up a sophisticated and inspired cuisine, infused with a hint of Italian culture, echoing the chef's former training in Europe. Michael Tusk modernizes tortelli, for example, with a mix of sweetcorn, nasturtium and fava bean. He also uses Dungeness crab, found on the West Coast of the USA, cooked in a risotto with dill flowers. The dishes are rich and flavorful while respecting the codes of elegant fine dining. Michael Tusk also celebrates Italian cuisine at his other SF eatery, Cotogna.

"We have closely watched Chef Michael Tusk for several years now. In his cuisine, every dish, even the simplest, is exceptional," comments Michael Ellis, International Director of the Michelin Guide. "It is his fine, precise techniques, that now makes Quince a unique experience for the customer: an experience that is worth the trip."

Quince joins the prestigious club of three-star restaurants already in San Francisco: Benu, The French Laundry, Manresa, Saison and The Restaurant at Meadwood.

For its 2017 edition, the Michelin Guide San Francisco awards a new two-star rating to David Barzelay's restaurant, Lazy Bear.

There are seven new additions to the one-star category.
