The magic cake that uses just two ingredients

While Jen Lauffer from Gingr Kitchen is a pro in the kitchen, creating deliciously healthy food recipes over on her Instagram account, she’s also a master at creating yummy recipes that are so easy a novice can do them!

For this unusual cake, all you need is two ingredients so it's perfect for getting the kids involved too.

While you may not be surprised to see you need flour, the other ingredient is a little more surprising… ice cream! Two tubs of your favourite flavour ice cream are mixed in with the flour and then baked in the oven. It’s basically the easiest cake recipe EVER!

The beauty of the recipe is that you can try out lots of different ice cream flavours. And those with dairy allergies won’t miss out. Jen says it works just as well with dairy-free ice cream. You can also use gluten-free flour – nobody needs to miss out on this treat!

Ice Cream Bread

Ingredients

2 tubs of your favourite ice cream

3 1/2 cups of self-rising flour

Method

1. Allow the ice cream to soften so it’s easier to mix

2. Mix in the flour with the ice cream

3. If you want to, you can add a bit of food colouring at this stage to jazz things up!

4. Pour into a non-stick cake tin

5. Bake in at 180 in a pre-heated oven for 40 minutes

Jen recommends finishing off with a dollop of brightly coloured icing and some sprinkles – although she also says freeze dried strawberries are a great addition and add a tiny bit of goodness to the final cake!
