Yums! Moist, tasty and healthy muffins!

The secret ingredient to these yummy muffins is the addition of yoghurt, which give it the right amount of softness and firmness to the bite! Here’s a bonus, it is easy to prepare too! If you are a beginner in baking, this is a motivating recipe to start with.

Using Del Monte's Premium Pitted Prunes for natural sweetness!

Here are the ingredients you’ll need: Del Monte California Pitted Prunes, all-purpose flour, salt,

baking powder, baking soda, white castor sugar, eggs, corn oil and Indian yogurt

Firstly, prepare the prunes and muffin batter.

Cut the prunes into smaller pieces using a pair of scissors

Using a scissor, cut the Del Monte California Pitted Prunes into 4-6 pieces each. In a mixing bowl, pour in egg, corn oil and yoghurt. Whisk the mixture evenly. Sieve flour, baking powder, baking soda, salt and sugar into the mixture and mix evenly.

Apart from Kueh Lapis, Prunes is not a familiar baking ingredient. So, we got curious and ask Home cook Carol on why she chose Prune instead of other berries. She mentioned that Prune is a natural choice to her because it is packed with a lot of nutrients and vitamins that are great for her grandchildren. It helps in building strong bones and muscles, and aids in bowel movement due to its high content of dietary fibre! In addition, Del Monte California Pitted Prunes is a Healthier Choice snack that has no sugar added. This will help to maintain her grandchildren’s weight and keep them active.

Make sure you mix the batter well for an even sweetness!

Finish off by folding the prunes into the mixture.

Secondly, bake the muffin and you’ll be ready to serve!

Preheat oven to 170oC.

A tip! Do not overfill the batter!

Flatten the batter so that it doesn't overfill

Spoon batter into muffin cup till it’s ¾ full. Try not to overfill as the muffins will rise during baking.

Transfer to the middle tray and bake for 20 mins till golden brown.

To check if the muffin is cooked, insert a satay stick into the middle. If the satay stick comes out clear and dry, the muffin is fully baked!

Ingredients

  • 250g Del Monte California Pitted Prunes

  • 250g all-purpose flour

  • 1/2tsp salt

  • 2tsp baking powder

  • 1/2tsp baking soda

  • 100g white castor sugar

  • 2 eggs

  • 120ml corn oil

  • 120g Indian yogurt

Instructions

Prepare the prunes and muffin batter

  1. Use a scissor to cut the prunes into 4 – 6 pieces each.

  2. In a mixing bowl, add egg, corn oil and yogurt. Whisk to combine.

  3. Sieve flour, baking powder, baking soda, salt and sugar into the mixture bowl, mix evenly.

  4. Fold the prunes into the mixture.

Bake and serve

  1. Preheat oven to 170 degrees

  2. Spoon batter into muffin cup till it’s ¾ full. Transfer to the middle tray and bake for 20 mins till golden brown. To check if the muffin is cooked, poke in satay stick. It’s cooked when it comes out clean.
