Ex-Raffles Hotel chef opens new soup dumplings concept hawker stall

Chef Leung’s Soup Dumplings probably sounds familiar, despite being a relatively new stall in Chinatown Complex Food Centre. That’s because it’s a new concept by the same person behind the famous Chef Leung’s Authentic Hand-milled Rice Noodle Rolls.

Chef Leong Tsz Cham had previously worked as a Raffles Hotel chef for 18 years prior to opening his first hawker stall in 2021. Using the dim sum-making skills he acquired, he began selling Hong Kong-style chee cheong fun (rice noodle rolls) made from hand-milled rice batter in Chinatown Complex.

Fast forward to Oct 2024, and he has opened a new stall in the same hawker centre with a different concept. This time, Chef Leung’s Soup Dumplings’ specialty is – you guessed it, soup dumplings. 

Why dumplings, though? Apparently, the second stall was a passion project by Chef Leung’s wife, who was also a chef. She used to work in Hilton Shanghai where she first met her husband, and specialised in making dumplings. 

Chef Leong’s involvement lies mostly in testing and refining the soup dumpling recipe, while his wife and son headfront the new stall.

The Signature Soup Dumplings (S$4.50 for 4 pcs) are a go-to for anyone’s first time at the stall. They’re very much like xiao long bao – juicy meat filling and flavourful broth encased in a delicate dumpling skin.

The only other items on the menu are Siew Mai w Fish Roe (S$4.50 for 3 pcs) and Water Chestnut Prawn Dumpling (S$4.50 for 3 pcs).

Those who have tried the dumplings have dubbed them a “better than Michelin standard” hidden gem. There’s also been much acknowledgement of the generous filling portions, fresh ingredients and a less greasy sensation while eating.

The fact that these restaurant-style dishes can be found at a low price in a hawker setting is what makes Chef Leung’s Soup Dumplings so unique. If you’ve already tried the Authentic Hand-milled Rice Noodle Rolls, maybe it’s time to check this new stall out, too.
