Dario Cecchini, crowned the World’s Greatest Butcher by the New York Times, is coming to Singapore with an Italian-style grilled sandwich hawker pop-up on 6 & 7 Mar.

Partnering with EX-SIA Air Steward turned local hawker Alvan Chew, the duo presents three specially made panini sandwiches served from Chew’s hawker stall, Bold x Braised located at Maxwell Food Centre.

From 11.30am to 2pm, the pop-up will be selling 3 options of panini sandwiches priced at S$6.50 each.

Panino Pastarmino is a beef sandwich featuring marinated beef brisket topped with Cecchini’s original ‘Darionese’ sauce, made from Italian garlic and parsley. The second, Panino con Guancia di Manzo, contains slow-cooked beef cheek seasoned with Italian Sangiovese red wine.

The final option is a collaborative menu item from Cecchini and Bold x Braised. This Braised Pork Belly Panino features Bold x Braised’s signature pork belly, lor bak stuffed into Tuscan-style bread.

Cecchini, prominently featured on the Netflix series “Chef’s Table,” is renowned for his commitment to ethical butchery. Strongly holding on to his respect for animals and food philosophy, Cecchini ensures that every part of the animal is utilised avoiding any wastage.

Inspired by his visits to Singapore’s hawker centres, he decided to open a pop-up at the renowned Maxwell Food Centre to serve his original recipes.

In collaboration with the like-minded Bold x Braised, which also uses all parts of the pig in their cooking, Cecchini and Chew aim to showcase a blend of Singapore’s hawker culture with Italian cuisine while highlighting their commitment to sustainable cooking.
