Make tastier and healthier Claypot Yam rice at home with the Mayer Rice Cooker with Ceramic Pot

The ceramic cooking pot heats efficiently and can retain food nutrients as well as provides a fluffy rice texture. Best thing is there's a glaze layer inner pot for non-stick performance and makes cleaning super convenient. Follow these steps, and you can make tastier and healthier Claypot rice at home.

Here’s what you’ll need. First, prepare the rice. In a frying pan, add in 1 tbsp oil and shallots will fragrant. Add in the rice and fry till the water dries up. Set it aside for later. Next, fry the ingredients and assemble to cook in the rice cooker. In a frying pan, add oil and fry Chinese sausage, chicken meat, mushrooms and dried prawns till fragrant. Flavour with dark soya sauce and pour in water. When ingredients are thoroughly cooked, season with salt and sugar. Add in yam and 100ml water, allow it to simmer for 10mins.

Mix in the cooked chicken ingredients and stir to mix well with rice

Pour the fried rice, water, chicken stock powder and salt into the cooker. Select "Claypot" cooking mode and press "Start". After 20 minutes, the rice cooker will produce a beeping sound. Let it continue to cook for another 5 minutes. Open the cover, add in the chicken mixture and mix well. Allow it to cook further till the cooker turns to "Warm" mode.

Ingredients

Ingredients

  • 200g chicken thighcut into bite size

  • 220g yamcut into bite size

  • 3pcs Chinese mushroomsoaked in hot water to soften and cut into strips

  • 40g Chinese sasuagesoak in water to deskin and slice diagonally

  • 25g dried prawnssoak in hot water

  • 1 tsp dark soya sauce

  • 2tbsp water

  • 100ml water

  • ¼tsp saltas desired

  • ¼tsp sugaras desired

Rice

  • 2cups ricewashed and drained

  • cups water

  • 2cloves garlicminced

  • 1pc shallotminced

  • 5g chicken stock powder

  • ½tbsp salt

Condiments

  • ½tsp sesame oil

  • ½tbsp dark soya sauce

  • 1tbsp fried shallots

  • coriander leavesgarnish

Instructions

Fry the rice

  1. In a frying pan, add in 1 tbsp oil. Fry garlic and shallots till fragrant. Add in rice and fry till water dries up. Set aside.

Fry the ingredients

  1. In a frying pan, add in 1 tbsp oil, fry Chinese sausage till fragrant.

  2. Add in chicken meat and fry it for 1 min till the chicken is ¾ cooked.

  3. Add in mushroom and dried prawns, dark soya sauce and water. Stir fry till the ingredients are fully cooked through and gravy dries up. Season with salt and sugar. Mix it well.

  4. Add in yam and 100ml water. Mix well and cover with lid. Allow it to simmer at medium low heat for 10 mins till the yam is soft enough to break into two but not mushy. Adjust taste with salt and sugar as desired and allow the gravy to thicken and dries up. Set aside.

Assemble the ingredients, cook it in the ceramic rice cooker. Garnish and serve immediately

  1. Pour the fried rice, water, chicken stock powder and salt into the cooker. Give it a good stir. Select “CLAYPOT” and press “START”.

  2. After cooking for 20 mins, you will hear the beep sound. Let it continue to cook for another 5 mins.

  3. Open the cover, add in the chicken mixture. Give it a few good mixes and close the cover. Let it continue to cook till the cooker turns to “WARM” mode.

  4. Before serving, mix in black soya sauce and sesame oil into the rice. Garnish with fried shallots, spring onions and then serve.
