Resembling a cosy log house, the charming Christmas Holiday Cabin Log Cake (S$82) offers the classic flavours of Black Forest – a homage to the hotel’s German beginnings in 1900 as the Teutonia Club. The milk chocolate ‘walls’ enclose soft chocolate sponge layered with chocolate cream, studded with dark sweet cherries prepared in a compote of cherry juice and red wine.

Adorning the cake are iconic facets of the hotel–its Venetian windows are transformed into hand-piped arched windows, and the Grand Tower wing is marked as a golden silhouette. The roof comprising housemade ladyfingers is graced with a light ‘snowfall’ of Chantilly cream and for a dash of sparkle, silver and gold white chocolate beads and gold flake.

The Fullerton Ondeh Ondeh Lamington Yule Log (S$69) features Gula Mela mousse and coconut crème with shredded coconut layered between pandan chiffon sponge cake; while the Fullerton Black Forest Yule Log is served (S$69) with rich Valrhona Guanaja mousse and a tinge of Morello cherry compote and dark chocolate ganache with chocolate sponge.

If you’re in a mood for something fruity and sweet, there are also the Coconut Calamansi Yule Log (S$69) and the Mango Sago Pomelo Yule Log Cake (S$69). For the adventurous, there’s the Teh Tarik Yule Log Cake (S$69).

The Scottish Ale Beer has a pronounced malty caramel and roasted malt flavour as the perfect complement to the decadent chocolate cake. The beer is infused into both the batter and swiss meringue buttercream for a robust burst of roasted malt flavour. Feuilletine flakes mixed with milk chocolate are combined into the log cake to provide an added dimension and crunch in every bite.
