What I tried at How’s Catering
The Crab-lebration comes with an illustrated placemat showcasing the chef recommendations and recipes, allowing your guests to follow the chef’s footsteps to get a headstart.
For those looking for a bit of fun, get wild and create anything under the sun with your innovative mind. All you have to do is place your items on top of the designated image, and you’re all set!
We were ecstatic to be able to craft our own exclusive creations. And with that, we got our hands down and dirty and started assembling. There were a dozen Mini Buttery Brioche Buns, and a container of Chilli Crab Kani Fumi Kamaboko along with some condiments.
It was time to commence the Crab-It-Your-Way fun by constructing our very first masterpiece, the Chilli Crab Kani Brioche Slider. After layering lettuce, tomato and pickled cucumbers, I placed a Homemade Louisiana Crab Brandade on it.
Next, I scooped a portion of the Chilli Crab Kani Fumi Kamaboko (shredded Japanese crabstick) before slathering the Homemade Chilli Crab Sauce onto it.
Voila! The loaded mini slider was complete. It was a mouthful as I attempted to savour all elements all at once with my first bite. As my teeth sunk into the soft, buttery bun, my taste buds were greeted by the slightly sweet and spicy chilli crab gravy.
The flavours paired flawlessly with the crabsticks and chunky crabcake, while the fresh veggies and tangy cucumber helped to counteract the richness.
I helped myself to another piece of Homemade Louisiana Crab Brandade (because it was that good), which was lightly breaded and stuffed with naturally sweet and briny premium crab meat and vegetables bits— it was the seafood rendition of a croquette.
There were 10 pieces of crab brandade that were served side-by-side with golden-brown pieces of Breaded Ebi Prawns.
I highly recommend dunking the breaded prawns into the lip-smacking Chilli Crab Mayonnaise dip. It was creamy and tangy with a hint of spice— it was hard stopping at just 1 piece.
I then moved on to the Crabmeat Egg White Fried Rice, adorned with luscious egg white, crabmeat, edamame, then garnished with spring onions and fried shallots.
The fried rice was delicious and perfectly-seasoned, with each grain remaining separate and not clumping together. The bits of crab meat added a hint of umami-ness while the bits of edamame gave it some texture.
I followed the steps for the Soft Shell Crab Fried Rice on the placemat. I crowned a piece of Crispy Soft Shell Crab atop the rice, then slathered it with chilli crab sauce and sprinkled Fried Shallots.
Despite getting doused in chilli crab gravy, the soft shell crab managed to retain its crispiness on the outside while remaining soft and yummy on the inside. The jumbo lump crab meat pieces in the sauce also gave a great texturised mouthfeel to the entire combo.
Next, I gave the Half Shell Queen Scallop stuffed with Crab Meat a try. Each shell was generously filled and packed some weight.
I added the Fried Garlic bits to it before slathering the chilli crab sauce over it, then finished it off with more Fried Garlic. The seafood duo of crab meat and scallops was filled with carrots, chives and tobiko, offering micro pops of oceanic essence as I savoured each mouthful.
It possessed a multi-dimensional punch of flavour, enhanced by the sweet and spicy sauce and the pungency of the garlic bits.
Another fun activity that you can participate in with your family and friends is making the Soft Shell Crab Bao Bun.
Take a Bao Bun and stuff lettuce, tomato and pickled cucumbers. Then, pile a piece of Crispy Soft Shell Crab before spooning some Mentaiko Mayonnaise over. Lastly, add some Tobiko and it’s ready— easy peasey!
Every bite was indulgent, with the briny savouriness of the mentaiko mayo and bits of tobiko perfectly complementing the crispy soft shell crab. The Bao Bun was soft and fluffy, providing a stark contrast in texture.
Alternatively, feel free to break the rules and mix and match any combinations you like— the world is your oyster!
