It’s amazing how cheese can be both sweet and savoury, enriching the dish’s flavour and texture. Despite being mildly lactose intolerant, writing this post probably had me eating the most cheese in my entire life, but it was so worth it.
If you’re like me, and have to run to the loo after eating anything dairy, I urge you to defy your body and gratify in the goodness of melted cheese every now and then. Eat first, regret later.
With this, I present you a list of wonderful melted cheesy dishes in Singapore, of which, most of them will definitely induce salivating in front of your screen.
10. Nanta BBQ – Cheese Deng-galbi
Cheese Deng-galbi ($50++). If melted cheese is good enough to give you hunger pangs, then twirling your spicy pork ribs and Korean rice cakes (tteokbokki) in bubbling, melted mozzarella cheese will go beyond your expectations.
The olives and mushrooms in the rich mozzarella bed gives the cheese deng-galbi a wholesome flavour. It comes with disposable plastic glove, so eat up without worrying about becoming a mess.
If spice fails to go with your stomach preference, the ribs also come in non-spicy BBQ seasoning.

9. Loof – Chilli Crab Cheese Fries
Loof’s Chilli Crab Cheese Fries ($14). Chilli Crab and melted cheese, why haven’t zi char stalls thought of this delicious fusion yet?
A pretty cool and messy-free alternative to your regular chilli crab dish, the fries are topped with a generous amount of sauce and REAL Sri Lankan crab meat. So grab a glass of wine and pair it with your new found cheesy love.

8. Epicurious cafe – Rainbow Toasties
The Rainbow Cheese Toastie ($9++) by Epicurious cafe at Robertson Quay is a 2016 food trend inspired by Hong Kong Cafe KALA Toast’s ‘unicorn toastie’, which you’ll want to have featured on your Instagram account.
The unassuming thick toast reveals threads of beautiful colours once teared apart.
It comprises of four colours of cheese: Pink (beetroot), Orange (carrot), Green (spinach) and Violet (red cabbage and eggplant). A blue coloured cheese currently being developed.
The melted cheese is a blend of mozzarella and parmesan, flavoured with truffle oil for an extra oomph to its taste.

7. Gyoza-ya – Yaki Cheesy Gyoza
Out of the three Gyoza-ya outlets in Singapore, Robinsons Orchard is the only outlet that serves the Yaki Cheesy Gyoza ($5.80). Quite contrary to its name that sounds like “yucky”, it’s really delicious.
The dish looked ordinary and had a pale yellow tint, not like the usual rich orange-yellow colour associated with melted cheese. However, I was proven wrong when I took the first bite into the gyoza.
Almost got scalded from the spurt of the juice from the steam meat, which reminded me of xiao long bao. Albeit not gooey, the cheese was slightly burnt with a torch to give a deeper taste to the gyoza. The skin wasn’t doughy, it had a good stretchy texture.

6. Seorae – Galmaegisal Melted Cheese
Galmaegisal (Original) ($21.90), Melted Cheese (Top up $2). Soerae makes for an indulgent Korean BBQ. The glorious gooey cheese heats up and melts in the moat around the the charcoal bbq pit, allowing diners to enrich the taste of their cooked meat with cheese.
The savoury flavours of the original galmaegisal came through strongly. It was chewy and encompasses mild Korean spices, which oozes out with each juicy bite – don’t forget to pair it was accompanying sauces like chilli paste, onion sauce and bean paste.
Seorae also offers interesting drinks and desserts on their menu, they include Yakult and Coffee soju, soju bombs that were assembled to collapse like dominoes, and pretty Bingsoos to complete your meal.

5. BAKE – Cheese Tarts
BAKE, Hokkaido’s famed cheese tarts, is still seemingly a favourite trending food. Don’t be deceived by the empty shop front as the queue snakes far and wide at the Ion Station atrium space.
For its taste to remain consistent, the tarts are prepared with ingredients from Hokkaido and pre-made in its Japan Store in Kinotoya, then freshly baked at its stores around the world.
The marshmallow-like cheese mousse is made from three different kinds of cheese – cheese from Hakodate in Hokkaido, cheese from Betsukai that is more full bodied as compared to the milder Hakodate cheese, as well as another brinier cheese from France.
Not only are they scrumptious, these tarts are retailing affordably at $3.50 per tart, or $19.50 per box of six tarts, all the more why people willingly stand in line to get their hands on it.

4. Overeasy
OverEasy clearly loves its Mac n Cheese, so much so that there is an entire section of the menu you can choose from. Go for the classic version to curb your cheesy cravings, or enhance its flavour by adding truffle and wild mushrooms.
Topped with a crunchy bed of bread crumbs on top, it’s quite impossible to put your spoon down at just one mouth.

3. boCHINche
Classic Provoleta, Almonds and Oregano Honey ($17). Served in a hot pan along with a box of toasted bread, the caramelized cheese and almond toppings gave the dish a lovely texture of warm gooeyness with bits of crunchiness.
While the cheese harden after sitting for awhile, the delicious flavours of the dish made up for it. Hop on down to boCHINche’s new space at at 115 Amoy Street to relish in new and classic items on the menu.

2. Ollie Cafe
Laced with a slew of new eateries in Orchard Gateway, Ollie Cafe is a little cafe situated at the corner of the mall’s basement and is clade in a raw industrial style.
Charming not only on its exterior, the menu packs a list of tantalising burgers that would make you salivate just by looking at the pictures hanging on the wall.
One of such is the Vintage Cheese Burger ($17.90++), which is slathered in a generous portion of melted cheese covering the entire burger.
Served with a tasty side of truffle fries, I found myself finishing the entire burger without much struggle as the portion weren’t that big. The buns were buttered and toasted till golden brown, making it great for soaking up the melted cheese.
You could choose either chicken or beef patty – I went for the chicken, which was made of minced chicken meat, season in herbs and spices, topped with caramelised onions, giving the burger a hint of sweetness.

1. Wine Connection Cheese Bar
Situated along Muhammad Sultan Road, the Wine Connection Cheese Bar not only serves up wallet-friendly wines, but also an entire fridge filled with an assortment of imported and local cheeses.
P.S. we were told by the head chef that the wines served here are slightly cheaper than the other Wine Connection branch, neighbours to them.
We went for the Cheese Raclette Set ($39++/pax, Minimum of two sharing pax), which came with hearty sides like potatoes, a platter of cold cuts, beef pastrami, Serano ham, and pork roulade.
The mesclun salad, drizzled over with vinaigrette dressing, is imported from France and still remained amazingly fresh.
The highlight of the entire meal was to watch the slab of Raclette cheese melt before your eyes. Using a heating apparatus from France, the sides of the cheese slowly dripped into individual pans – it was food porn right before us.
Don’t be silly like us, we weren’t supposed to wait till the pan fills up. Instead, scoop up the melted cheese quickly before it coagulates and hardens again, and pair it with the sides or eat it on its own. While it was slightly salty, the dish wasn’t overwhelming on the whole.
