I remember my mom packing my lunches for me when I was a kid, and now that I’m older, I realize how much I took this very caring act for granted. When I moved on to college, I had different places where I could grab something to satiate me between classes.

I could head to the dining hall and grab a quick bite or to our convenience store for an overpriced sandwich (seriously, they were like $5). Or, for an even better treat, go to our local Starbucks (like "Today" star Savannah Guthrie does every day for lunch). There were so many options!

But now, as I’ve graduated and entered the workforce, I realize I can’t afford to eat out for lunch every day. So, in an effort to save some money and zhush up my boring leftover lunches, I’ve started to hunt for the perfect grocery store finds to pack myself — and I think I’ve perfected this exercise, with a little help from Aldi. I try to pack my lunches the night before, and one of the easiest things to prepare is mac and cheese. The best in my opinion is Specially Selected Smoked Gouda. It’s super creamy and easy to make — and to make it extra filling, I like to add some shredded chicken, toss it in a container, and go to sleep knowing I'm ready to seize the day.
