Smoked salmon and potato quiche

Savoury pies need not be a hassle to make at home. Just remember the basic combination of a pie pastry crust with an egg and cream mixture, and you can add in your own favourite pie fillings. Recipe: Mix flour, a pinch of salt and cold butter until it forms a sand-like texture. Add half a beaten egg to the mixture and blend until the dough comes together. Shape the dough and chill for about half an hour. Roll the dough out, place it onto the mould and use a fork to poke holes into it. Place parchment paper above the dough and fill with baking beans to prevent the pastry from rising. Bake at 180 degrees Celsius for 20 minutes. Then take the pastry out, brush some beaten egg and bake for another 3 minutes. Boil potatoes with salted water and slice it. Mix an egg, cream, black pepper and salt together.
