Singapore's new 'Chocolate Master' to compete in Paris next year

Singaporean chocolatier Desmond Lee has come out tops in this year’s national selection for the World Chocolate Masters competition. Lee will battle representatives from 19 other countries in the international round in Paris in October 2018.

Representing Mandarin Oriental Hotel, Lee was awarded 1st place for his futuristic chocolate creation at the locally held selection event on Monday (16 October). Tai Chien Lin from Raffles Hotel and Kelvin Kan from Marina Bay Sands Hotel were awarded 2nd and 3rd place respectively.

According to a press release, Lee’s chocolate showpiece “fused together the purity of nature with the beauty of a female figure”.

“His unique design concept was birthed from a personal conviction that the future will see people living in closer proximity with nature,” the release said. Lee also incorporated a QR code into his work to symbolise digitalisation.

The theme of the competition was “Futropolis”, which challenged contestants to “think about the future of chocolate innovations”. Some of the criteria the jury focused on included new chocolate flavour combinations, forward-thinking textures and a “design language” that might influence future chocolatiers.
