Singapore’s first-ever halal Korean buffet is finally here
Stamford Catering has just launched Singapore’s first and only halal-certified Korean buffet. It is a collaboration with Chef Kevin Nam from SCBD Korean Tofu House and Stamford Catering’s Executive Chef Chris Ong.
The move is timed to coincide with the start of what is seen as the post-pandemic era as well as the annual pickup in the F&B scene as we usher in the festive period. The talented chefs have curated two separate selections, the Daebak Korean Buffet Spread and the Daebak Korean Party Set, designed to work perfectly with the catering services the company provides.
Each selection is available in 2 separate menus. The Daebak Korean Buffet Spread (S$18++ per pax for minimum 30 pax/ S$22++ per pax for minimum 25 pax) is ideal for corporate events and office gatherings. The Daebak Korean Party Set (S$200++/ S$240++, both for a minimum of 10 pax) is better suited to smaller gatherings such as homes lunches and dinners.
Despite the novelty of a halal buffet, each dish has been curated to harmonise with the three principles of Korean cuisine: balance, health and time. The chefs also integrated the unique Korean communal aspect through the philosophies of season, wellness and balance.
Fans of Korean food can look forward to delicacies that include Bulgogi (Stir-fried Beef), Kimchi Fried Rice, Dakgangjeong (Sweet Crispy Korean Fried Chicken), Japchae (Stir-fry Glass Noodles) and Soontofu (Seafood).
The meat of the Bulgogi was super tender and it paired so nicely with the Kimchi Fried Rice.
The Kimchi Fried Rice itself was light and was balanced with just the right amount of kimchi sourness.
I could not believe how much flavour went into each glass noodle of the Japchae!
Korean fried chicken is known for its crispy crunch and Stamford’s version doesn’t disappoint.
A common feature to all 4 halal menus is SBCD Korean Tofu House’s signature Soon Tofu Seafood Soup, recreated in a halal avatar from the original 10-ingredient secret recipe soup paste (dadaegi in Korean). Chef Kevin Nam and Chef Chris Ong meticulous efforts have fashioned this version of the broth to taste exactly like the original. I loved its light sweetness but it’s so packed with ingredients that I was left yearning for more soup. (I don’t think that’s really a valid complaint!)
