Singapore bakers nominated for World Gourmet Summit Awards for the first time

The 21st World Gourmet Summit (WGS) will be returning to Singapore with three new award categories for its Awards of Excellence, one of which is dedicated to talented bakers in the country.

The other two categories are Restaurant of the Year and Restaurateur of the Year.

The Awards of Excellence, which takes place on 27 March, is part of the annual international gastronomic festival and has been considered as one of the most respected accolades in Singapore and the region. This year, 36 culinary specialists have been nominated.

Here are the Singapore bakers nominated for WGS’ Awards of Excellence for the first time:

Leonard Yue is a Master Baker at Fairmont Singapore and Swissotel The Stamford, and has been leading the bakery team there for the past three and a half years. Overall, Yue has had 20 years of experience in the local pastry scene. He has also worked at Shangri-la and Hilton hotel.

Timothy De Costa has been the mainstay at Raffles Hotel since 2007. His achievements include creating a magnificent bread display for the hotel’s 125th anniversary celebration.

Woon Thai Suan is the chief baker at Fullerton Hotel and Fullerton Bay Hotel. He manages the bakery kitchen and creates pastries from traditional recipes. Popular favourites made by him are buttery scones and flaky croissants in assorted flavours.

Dan Eng Heng from Grand Hyatt Singapore has been a baker for 20 years. He first started out in 1985 as a baker for Delifrance, followed by Four Leaves. He joined Grand Hyatt as chief baker in 2003.

International chefs coming to Singapore for WGS

Chefs from over 16 countries such as The Netherlands and Switzerland will also be gathering in Singapore for the summit, which will be hosting a variety of events including masterclasses and workshops from 20 March to 16 April.

Notable international chefs include the Netherlands’ Jarno Eggen from two-Michelin-starred De Groene Lantaarn, Switzerland’s Grill-Ueli alias Ueli Bernold, Mexico’s Daniel Ovadia and Sri Lanka’s Dharshan Munidasa.

From Asia, Japan’s dessert sensation Kiriko Nakamura and Thaninthorn Chantrawan from Thailand will also be in Singapore.

Singapore’s National Culinary Team, which won the 2016 Culinary Olympics, will be among the chefs serving up dinner at the National Kidney Foundation’s “Better Lives” Charity Gala Dinner on 6 April.

Singapore’s Ryan Clift, together with US chef Mitch Lienhard, will be presenting an exquisite dinner at Tippling Club on 30 March.
