This is an all-in-one pot soup and is easy to make!

These are the ingredients that you will need: Half a duck, salted vegetables, tomatoes, salted plums, garlic, chicken stock, water and white pepper!

Before you get started on the duck, remember to chop it up into chunky pieces first. Proceed to rub salt on the duck and rinse it thoroughly after.

By blanching the duck, it will give you a clearer soup later!

Then, heat up water in a pot. When it starts to simmer, add in the duck meat and blanch it. By doing so, it will help to remove the scum on the duck and give you a clearer soup later! Set aside the duck once it’s done.

Add in all the ingredients into the pot for boiling

Time to boil the soup! If you are using a stove, add the blanched duck and all the ingredients into a pot. Cook over the stove for 3 hours until the duck softens. Remember to monitor the water level as it cooks and top it up with more water when required!

If you are using the pressure cooker, add the blanched duck and all the ingredients into the electric pressure cooker. Proceed to select the right setting and it will take roughly 1 hour to cook.

Ingredients

  • 1/2 duckchop into chunky pieces

  • 500g salted vegetablesliced into large pieces

  • 2 tomatoesquartered

  • 4 salted plumsmashed slightly to release the juice

  • 2 cloves garlicrinsed and mashed

  • 1L chicken stock

  • 500ml water

  • 1tbsp white peppercrushed

Instructions

Prepare the duck

  1. Rub salt on the duck and rinse it thoroughly

  2. In a pot, heat up water. When it starts to simmer, add in the duck meat to blanch it. #Tip: This will remove the scum on the duck and it will give you a clearer soup.

Boil the soup & serve hot

  1. Stove method: Add the blanched duck and all the ingredients into a pot. Cook over stove for 3 hours till the duck softens. Monitor the water level as it cooks, top up with more water when required.

  2. Pressure cooker method: Add the blanched duck and all the ingredients into the electric pressure cooker. Select the right setting and it will take about 1 hour to cook.
