Capella Singapore

For something a little more tranquil away from the city, head to The Knolls at Capella. Begin 2021 with an indulgent Mediterranean-inspired feast by the swimming pool, topped with views of the sea. The New Year’s Day three-course lunch menu from 12 pm to 3pm is priced at S$138 per person.

For starters, you can choose either the roasted Hokkaido scallops with caviar, braised baby leek and potato emulsion or the cured wagyu beef pastrami with goat cheese-fig crispy filo and confit egg yolk. Mains-wise, the festive selection includes honey-rosemary brined turkey served with brussel sprouts, heirloom carrots, and cranberry sauce, or the robust braised wagyu beef short ribs with parsnip mousseline, purple cauliflower and shimeiji mushroom. You could also opt for the succulent roasted Atlantic black cod, partnered with cassoulet style cannellini beans, crispy baby squid, iberico chorizo, and lobster bisque emulsion.

Round off with either the cappuccino tres leches with caramelised banana, Ethiopian coffee ice cream, and Madagascar vanilla mascarpone cream. Or a luscious eight-textures chocolate cake with hazelnut financier and spiced brown butter ice cream. To complete your repast, munch on the cheese selection and Valrhona chocolate truffles.
