Prawn Noodle with Pork Rib 虾面排骨 (干/汤)

Sealing the deal for this dish was completing it in the pressure cooker which really made a different to a tender and juicy pork rib.

My siblings and nephews are chilli lovers, I started to make a dried version of prawn noodles.

You can’t go wrong with the perfect Sambal chilli combination!

Ingredients for Prawn & Pork Rib soup (虾汤材料)

  • 1kg prawns (1公斤大虾)

  • 500g – 1 kg pork ribs (500克 – 1公斤排骨)

  • 5 cloves garlic (5瓣蒜)

  • 2 litres Chicken stock(2升鸡汤)

  • 1/2 tsp pepper(1/2茶匙胡椒粉)

  • 1/4 tsp dark soya sauce(1/4茶匙酱油)

  • 15 g rock sugar(15克冰糖)

  • 1/4 tbsp salt(1/4汤匙盐)

Ingredients for the dry noodle 虾面干材料)

  • 800g yellow noodles (800克黄面条)

  • 300g beansprouts (300克豆芽)

  • 1 Fishcake, sliced (1个鱼饼,切片)

  • Fried shallots (炸大葱)

  • Chilli Padi, chop into small pieces (小辣椒,碎成小块)

  • Light soya sauce (酱青)

  • Lard or fried shallots oil (猪油或葱油)

  • Sambal chilli (三巴辣椒)

  • Spring onion, chopped (青葱,切碎)

Cooking Direction

Step 1: Prepare the prawn and set aside 把虾烫熟,破壳

  • In a pan with 1l water, add in 1 tsp salt. Once it starts to simmer, blanch prawn till it’s cooked. (在锅里,倒入1升水和1茶匙盐。当水一旦煮热,把虾倒入锅里烫熟。)

  • Remove the shell, leaving the tail intact. Set aside the prawn and shell separately. (让虾冷却后,将虾壳取出,准备煮虾汤。虾肉与尾部,搁放一旁,备用。)

Step 2: Prepare and cook the prawn and pork rib soup 煮虾汤)

  • Blanch pork ribs with hot water to remove impurities. Set aside. (用热水烫排骨。然后,用温室的水冲洗,以去除杂质。备用。)

  • In a frying pan, heat up 1 tbsp oil. Add in garlic and prawns shells, stir-fry for a minute. Add in 2l chicken stock and pork ribs, bring it to a boil. Transfer to a pressure cooker. Use the correct setting and cook till the pork softens. (在煎锅里热1汤匙油。加入大蒜和虾壳,炒一分钟。加入2升鸡汤和猪排,煮沸。转移到压气锅。使用对的设置, 将排骨煮嫩。)

  • Once it’s cook, season the soup with pepper, dark soya sauce, rock sugar and salt. (一旦虾汤煮好,倒入胡椒粉,酱油,冰糖和盐调味。)

  • Strain the soup and remove the pork ribs. (用笊篱将虾壳和排骨取出。把猪肉放入盘里,备用。)

Step 3A: Assembling the dry prawn noodle (1 serving) (准备一人份的干捞虾面)

  • In a serving bowl, mix 1 tbsp light soya sauce, ½ tbsp lard/shallots oil, 1 tbsp sambal chilli in and 2 tbsp prawn soup. (在一个碗里,混合1汤匙酱青,½汤匙猪油/葱油,1汤匙三巴辣椒和2汤匙虾汤。)

  • In a pot of simmering water, blanch 150g yellow noodle, transfer to the serving bowl. Blanch fish cake and handful of beansprouts. Once it’s cooked, lay it on the noodle with prawn, pork ribs, fried shallots. (在一锅热水中,将150壳黄面煮熟,倒入碗里。 然后,烫鱼饼和豆芽。一旦煮熟,与虾,排骨,炸葱一起放在面条上。)

  • Garnish with spring onion and serve immediately with a bowl of hot soup. (撒上青葱,就能与热腾腾的虾汤一起享用!)

 

Step 3B: Assembling the soup prawn noodle (1 serving) (准备一人份的虾烫面)

  • Blanch 150g yellow noodles,beansprouts and fish cake in simmering water. Transfer into a bowl.(在一锅热水中,将150壳黄面, 鱼饼和豆芽烫熟。倒入碗里。)

  • Add hot prawn broth into the bowl and top it up with prawns, pork ribs and fried shallot. Serve immediately with dark soya sauce and chilli padi. (将热虾汤倒入碗里,加入虾与排骨。撒上炸葱,与辣椒酱油一起享用!)
