Of all the traditional Malay Kuehs in Singapore, the Nonya Kueh Lapis, not to be confused with Prune Kueh Lapis, is a great childhood favourite because of its colourful layers and chewy texture.

Also known as Kuih Lapis or 9 layer kueh in Malaysia and Indonesia, there are two ways to eat it: layer by layer or by biting right into it. The former is a more playful method of eating the kueh which most children and even some adults love to do! But whether you are a layer-eater or regular biter, enjoying the Rainbow Kueh Lapis always comes with a sweet nostalgic feeling.

Although it is a great snack for both adults and children, it is not exactly the healthiest snack to have everyday either. Hence, we have home cook Jessie Koey’s recipe for a healthy Nonya Kueh Lapis enriched with Nutrimix Avocado powder!

The Nutrimix Avocado powder is made of avocados and 26 different types of organic grains, beans, oats and seeds. These wholesome ingredients contain heart-healthy monounsaturated fatty acids which helps to maintain healthy cholesterol levels and lower risk of heart diseases. Nutrimix Avocado Powder

Here are the ingredients you will need to make this healthy Nonya Kueh Lapis: tapioca flour, sago flour, rice flour, coconut cream, water, castor sugar, salt, pandan leaves, red and green food colouring, and Nutrimix Avocado powder.

The first step is the prepare the Kueh Lapis Batter for the layers of the kueh.

In a large bowl, combine tapioca flour, sago flour, rice flour, coconut cream and 150ml of water. Mix well with a whisk to combine the ingredients.

Combine tapioca flour, sago flour, rice flour, coconut cream and water in a large bowl

Mix well with a whisk

Strain the mixture through a sieve to catch any lumps and set aside.

Strain the kueh lapis batter

In a saucepan, add 260ml of water, sugar, salt and pandan leaves. Stir the mixture and bring it to a quick boil. This will be the pandan sugar water that flavours the kueh lapis.

Mix the pandan sugar mixture and bring to a boil

Discard the pandan leaves and pour the pandan sugar mixture into the kueh lapis batter. Mix well to combine.

Mix well with a whisk

Divide the kueh lapis batter into three equal portions and colour one portion red and another green with the red and green food colouring. Leave the third portion white.

Divide the batter into three and colour the first portion red and the second green

The second step is to prepare the Nutrimix Avocado kueh lapis batter that will form the base layer of the kueh lapis.

In a large mixing bowl, add tapioca flour, rice flour, coconut cream, water and Nutritmix Avocado powder and mix well.

Combine tapioca flour, rice flour, coconut cream, water and Nutritmix Avocado powder in a mixing bowl

Strain the mixture and set aside. In a saucepan, add water and sugar and bring it to a quick boil then pour it into the strained batter and mix well.

Now, its time to steam the kueh lapis!

Pour the Nutrimix Avocado kueh lapis batter into a greased seven-inch square pan and let it steam for eight minutes. #Tip: you can line the tin with baking paper for easy removal of the kueh later.

Pour the Nutrimix Avocado batter into the baking tin and steam for 8 minutes

Once the batter has been steamed, pour a ladle of green kueh lapis batter and steam for six to eight minutes until it has set. Continue this step in the order of white, red, green, white, and lastly red batter.

Pour a ladle of green batter and steam for 6-8 minutes

Pour a ladle of white batter and steam for 6-8 minutes. Repeat with the other colours.

For the last red layer, let the kueh lapis steam for 15-20 minutes. #Tip: as it is a long steam process, remember to add boiling water every 15-20 minutes to the steamer or as needed.

Steam the last red layer of the kueh lapis for 15-20 minutes

Once done, let the kueh lapis cool for two to three hours and gently remove it from the baking tin. Cut to serve using a piece of thread or dental floss. Enjoy your healthy Nonya Kueh Lapis!

Ingredients

Kueh Lapis batter

  • 75g tapioca flour

  • 60g sago flour

  • 60g rice flour

  • 190ml coconut cream

  • 150ml waterfor base of kueh lapis batter

  • 260ml waterfor pandan sugar syrup

  • 150g caster sugar

  • 1/8tsp salt

  • 3blades pandan leavesknotted

  • 1/2tsp red food colouringor as desired

  • 1/2tsp green food colouringor as desired

Nutrimix Avocado Batter

  • 105g tapioca flour

  • 90g rice flour

  • 150ml coconut cream

  • 225ml water

  • 4tbsp Nutrimix Avocado powder

  • 225ml waterfor sugar syrup

  • 130g castor sugar

Instructions

Make the kueh lapis batter

  1. In a mixing bowl, combine tapioca flour, sago flour, rice flour, coconut cream and 150ml water and mix well.

  2. Strain the mixture and set aside.

  3. In a saucepan, add 260ml water, sugar, salt, pandan leaves and bring to a quick boil.

  4. Discard pandan leaves. Pour the pandan sugar mixture into the flour mixture and mix well.

  5. Divide into 3 equal portions and colour 1 portion red and 1 portion green. Leave 1 portion white.

Make the Nutrimix Avocado batter

  1. In a mixing bowl, combine tapioca flour, rice flour, coconut cream, water and Nutrimix Avocado powder and mix well.

  2. Strain the mixture and set aside.

  3. In a saucepan, add water and sugar and bring to a quick boil.

  4. Pour the sugar syrup into the avocado flour mixture and mix well.

Steam the kueh lapis

  1. Pour the Nutrimix batter in step 2 into a well-oiled 7-inch square pan and steam for 8 minutes on high heat. #Tip: You may line the pan with baking paper for easy removal of the kueh lapis later.

  2. Pour in a ladle of green batter and steam for 6-8 minutes until the surface is somewhat firm. Repeat in the order of white, red, green, white and lastly red.

  3. For the last red portion, steam for 15-20 minutes. Tip: As it is a long steaming process, add boiling water every 15-20 minutes to the steamer or as needed.

  4. Cool the kueh lapis for 2-3 hours. Gently remove it from the pan and cut into serving size using a piece of thread or dental floss.
