Michelin-starred Tsuta restaurant unveils new Miso Soba in Singapore

Local foodies, rejoice. You no longer have to travel to Japan to get a taste of Michelin-starred Tsuta restaurant’s signature Miso Soba.

Previously only available in Japan, the new Miso Soba is made with red-hued hatcho miso imported from Japan’s Tokushima Prefecture, which gives it a distinct taste from most white miso ramen in Singapore.

Lean char siu made of pork collar accompanies the noodles, while porcini mushroom oil, bean sprouts, watercress and pan-fried corn are also added to the broth to give it a rich, buttery flavour.

The Miso Soba costs $16 and is available exclusively at Tsuta Singapore’s second outlet in Tai Seng, which was opened recently in February 2017.

While the Miso Soba is not available at Tsuta’s other outlet in Pacific Plaza, there are plans to switch both outlets’ offerings. This way, Pacific Plaza’s exclusive Shio Soba will be sold at the Tai Seng outlet, while those in town will be able to get a taste of the Miso Soba.

Tsuta also has plans to bring more soba flavours to Singapore. Tsuta’s founder, Chef Yuki Onishi, will be visiting Singapore to introduce new flavours to local-based chefs in April, but no date has been set for such a launch.

Like the flagship store in Tokyo’s Sugamo neighbourhood, both outlets in Singapore only serve a fixed number of bowls a day.

This is because Tsuta’s noodles are freshly made daily and cannot be replenished once they run out during the day.

Only 250 bowls are prepared in each Singapore outlet, a slight increase from the 150 bowls served in Japan.
