Ingredients 食材

  • 800g beef shin, cut into chunks (800g牛肉,切大块)

  • 1 onion, diced (1洋葱,切丁)

  • 4 stalks celery, sliced thinly (4茎芹,切小块)

  • 2 potatoes, cut into chunks (2马铃薯,切块)

  • 1 carrot, cut into chunks (1胡萝卜,去皮,切块)

  • 1 packet of brown mushrooms, cut into halves (1盒棕色蘑菇,切半)

  • 6 twigs of thyme or 3 bay leaves (6枝新鲜百里香或3个月桂叶)

  • A bunch of fresh oregano, leaves and stalks (一束新鲜牛至,叶子和茎)

  • 6 garlic cloves, peeled (6瓣蒜,剥皮)

  • 1 tbsp plain flour (1汤匙面粉)

  • 100 ml red wine (100ml红葡萄酒)

  • 500ml beef broth (500ml牛肉清汤)

  • 1.5 tbsp Worcestershire sauce (1.5汤匙渥斯特夏酱)

Cooking Directions 烹煮过程

Step 1: Pan sear beef cubes over high heat (煮牛肉)

Heat up a pan with olive oil, add in beef cubes and season with salt and pepper. Sear the meat on high heat. Once the surface have turn brown, flip it to sear and brown the other side. Remove from pan and set aside.

在炒锅里, 加热橄榄油。 放入牛肉块,撒上盐和胡椒粉调味。用大火,快煮牛肉。一旦表面变成棕色,翻转另一边。当四面都变棕色,把牛肉取出,备用。

Step 2: Cook the vegetables (煮蔬菜)

In a frying pan with oil, add in celery and onion. Stir-fry on medium heat till fragrant and soft. Add in red wine, stir fry a few seconds to evaporate the alcohol. Stir in plain flour, cook for 1 minute to thicken the sauce. Add in beef stock and bring it to a boil. Add carrots, mushrooms, thyme, oregano, garlic and Worcestershire sauce, bring to a boil. Lastly, add potatoes and the beef cubes to the pot. Bring to a boil.

Transfer to the pressure cooker.

Step 3: Transferred to a pressure cooker 转移到压力锅)

Select the right settings on your pressure cooker to cook the meat. Stew till the beef is tender。

在压力锅上选择正确的设置来炖肉。

 

Step 4: Adjust the thickness & amount of sauce (调整酱汁的厚度和量)

Once the beef stew is cooked, adjust the sauce based on your preference.

If you prefer it with more sauce, add in more beef broth.

If you prefer the sauce to be thicker, add in flour premixed with water.

一旦炖牛肉煮熟,根据您的喜好调整酱汁。如果你喜欢更多的酱汁,加入更多的牛肉清汤。如果你喜欢酱汁厚一点,加入面粉水。

 

Step 5: Serve hot! 上菜咯!)

Serve the stew hot with rice or crusty bread。
