How do we make eggs more appealing to kids? Today, we show you how easy it is to create some interesting and exciting lunch box recipes with eggs in various styles!

Everyone loves eggs, and as we all know, a lunch box is never complete without them – here’s a fool proof way to perfecting eggs in different ways – using the Meyer Egg Roaster pan.

Here are three recipes that home cook, Christine Tan, has shared with us

The first recipe is an Egg Blanket.

Here are the ingredients you will require: eggs, milk, mirin, pepper, salt and oil.

In a mixing bowl, crack the eggs. Add in all the ingredients except oil. Whisk till smooth.

Heat up the egg roaster and grease it with oil.

Pour in the egg mixture and swirl the pan to ensure that it is nicely spread out and cooked thoroughly.

Slide the egg blanket from the pan and place it on your dish.

The second dish is a Mixed Vegetable Egg Roll. If you like vegetables in your eggs, you will surely be a fan of this egg.

Here are the ingredients required: Eggs, milk, shredded cheese, onions, carrots, garlic powder, pepper, salt and oil.

In a mixing bowl, crack the eggs and whisk until it’s smooth. Pour in the milk, cheese, onion, carrot, garlic powder, pepper and salt and mix well.

Heat up the Meyer Egg Roaster and grease the pan. Ensure that all the corners are well-oiled.

Pour 1/3 of the egg mixture in the pan. Gently roll the egg inwards.

Press it firmly and continue to add in another layer of mixture to wrap the roll up. Roll until the desired thickness is achieved or until all egg mixture is used up.

The last dish is a nutritious and generously filled Egg Roll with Salmon and Cheese.

The ingredients needed are: salmon fillet, garlic powder, eggs, milk, pepper, salt, oil and sliced cheese.

Using Meyer’s Egg Roaster, cook the salmon on both sides and remove the skin. Transfer the salmon into a mixing bowl. Using a fork, break the salmon into small pieces, almost into a mash. Add in garlic powder, salt and pepper. Give it a good mix and set aside.

In a medium bowl, crack the eggs and add in the milk, salt and pepper.

Whisk until the mixture is smooth.

It is now time to prepare the omelette! Heat up the Egg Roaster and grease it with oil.

Pour in 1/3 of egg mixture and allow the it to set for 1 minute. Then, place a piece of cheese on top. Scoop some salmon onto the cheese and gently roll the eggs inwards. Press it firmly and continue to add in another layer of mixture to wrap the roll up.

Roll until the desired thickness is achieved or until all the egg mixture is used up.

What’s great is that all the steps are relatively similar, and you can basically create three different dishes using the same pan. That also means less washing!

Egg Blanket

Ingredients

  • 3 eggs

  • 1tbsp milk

  • 1/2tsp mirin

  • 1/8tsp pepper

  • 1/8tsp salt

  • 1/8tsp oil

Instructions

Prepare the egg roll

  1. Crack the eggs in a bowl and add in milk, mirin, pepper and salt.

  2. Whisk egg mixture till smooth.

  3. Heat the pan and grease the pan with oil.

  4. Pour in the egg mixture and swirl the pan to ensure the mixture is spread evenly. #Tip: You may wish to pour half the egg mixture or all at once depending on your pan size.

  5. Remove the egg blanket from the pan once fully cooked.

Assemble and serve

  1. Lay the egg blanket over rice and serve warm.

 

Mixed Vegetable Egg Roll

Ingredients

  • 5 eggs

  • 2tbsp milk

  • 2tbsp shredded cheese

  • 1tbsp oniondiced

  • 1tbsp carrotdices

  • 1/3tsp garlic powder

  • 1/8tsp pepper

  • 1/8tsp salt

  • 1/8tsp oil

Instructions

Prepare the egg roll

  1. Crack the eggs in a bowl and whisk till smooth.

  2. Add in milk, cheese, onion, carrot, garlic powder, pepper, and salt and mix well.

  3. Heat the pan and grease the pan with oil.

  4. Pour in 1/3 of the egg mixture and swirl the pan to ensure the mixture is spread evenly.

  5. Allow egg mixture to cook for about a minute and roll the egg inwards towards the end of the pan. #Tip: You can use chopsticks or spatula to help roll the egg.

  6. Add in another layer of the egg mixture and continue rolling the egg roll until all the egg mixture is used up. Tip: Grease the pan with oil before pouring in each layer of egg mixture.

Assemble and serve

  1. Let the egg roll cool slightly before slicing it and serve warm.

 

Egg Roll with Salmon and Cheese

Ingredients

Salmon

  • 1 small salmon fillet

  • 1/3tsp garlic powder

  • 1/4tsp salt

  • 1/4tsp pepper

Egg mixture

  • 6 eggs

  • 1tbsp milk

  • 1/4tsp pepper

  • 1/4tsp salt

  • 1/8tsp oil

  • 2slices cheese

  • fish roefor garnish

Instructions

Prepare the salmon

  1. Pan sear salmon on both sides till fully cooked.

  2. Remove the salmon skin and season the salmon with garlic powder, salt and pepper.

  3. Break the salmon into flakes using a fork.

Prepare the egg roll

  1. Crack the eggs in a bowl and add in milk, pepper and salt.

  2. Whisk egg mixture till smooth.

  3. Heat the pan and grease the pan with oil.

  4. Pour in 1/3 of the egg mixture and swirl the pan to ensure the mixture is spread evenly.

  5. Allow egg mixture to cook for about a minute and gently place a piece of cheese and salmon flakes onto the egg and roll the egg inwards towards the end of the pan. #Tip: You can use chopsticks or spatula to help roll the egg.

  6. Add in another layer of the egg mixture, cheese and salmon flakes and continue rolling the egg roll. #Tip: You may repeat the steps to make more rolls. #Tip: Grease the pan with oil before pouring in each layer of egg mixture

Assemble and serve

  1. Let the egg roll cool slightly before slicing it.

  2. Garnish with fish roe and serve warm.
