The Clifford Pier

This National Day, head to The Clifford Pier for a sumptuous dim sum brunch, featuring siew mai with crab roe and fluffy char siew pau served from old-fashioned trolleys. Check out the live stations, which dishes out kampung-style charcoal grilled chicken and beef, and chilli crab gravy with crispy mantou. Available on 9 August, from 11 am to 1pm, the brunch is priced from S$65. Add S$138 per adult for free flowing of Veuve Clicquot champagne, wines and beers.

For dinner on 9 August, look forward to the National Day Seafood Buffet which rolls out Maine lobster and snow crab alongside local dishes such as steamed sea bass with superior soya sauce and crispy garlic, wok-fried sambal sotong with caramelised onion and baked sambal salmon with lemon grass and kaffir lime. The buffet is available from 6pm to 10pm. Priced at $156 per adult. Add S$138 per adult for free flowing of Veuve Clicquot champagne, wines and beers. AquaMarine

AquaMarine’s Balik Kampung food promotion, offered in conjunction with National Day, pays homage to our local cuisine. The halal-certified buffet will also serve a range of nostalgic favourites. Saint Pierre
For an exceptional fine dining meal topped with fabulous fireworks views, make a booking at Saint Pierre this 9 August. Instead of the usual modern French cuisine with Japanese elements, Chef Emmanuel Stroobant will surprise diners with his Singapore-inspired menu featuring a host of luxurious ingredients.

Start with canapés of brinjal buah keluak, salted egg popiah, sambal lady’s finger and kueh pie tee. These are followed by a innovative abalone “congee”: abalone is poached in sake, dressed with tomato and marigold oil, and topped with oscietra caviar. Next is the chef’s version of laksa comprising a succulent pan-fried scallop bathed in mild coconut sauce flavoured with homemade laksa paste. There’s also his chilli crab rendition composed of Hokkaido hairy crab assembled into a tower, and served with crab sauce and mantou. The rendang dish comes in the form of A5 omi beef, perked up with galangal, garlic, and lemongrass, and served with jackfruit and keropok on the side. Dessert is a special “kaya” millefeuille, or an assembly of filo pastry with gula Melaka kaya, and raspberry sorbet. For the National Day Dinner Saint Pierre will only one seating at 6pm (S$248 per person).

LeVeL33

The microbrewery of LeVel33 affords a bird’s eye view of Marina Bay and the NDP fireworks. To celebrate the occasion, order the Black Glutinous Rice Beer, a special new brew created by resident brewmaster Gabriel Garcia. The drink is made by combining boiled rice with barley malt, and then fermenting it with ale yeast. It is also brewed entirely with Singapore tap water. The outcome? A reddish beer that’s light-bodied and fruity beer.

If you prefer to have dinner indoors, pay $108 per person, which includes a dinner sharing menu plus one 0.3L of beer or a glass of house pour wine. You will get to savour a range of locally inspired dishes such as Lager-infused kingfish sashimi with a sweet ginger dressing; la la from Ah Hua Kelong stir-fried with curry leaves; pandan and salt baked chicken with risoni; and wagyu beef intercostal served with sambal and local greens. Round off your meal with a “Singapore Sling” Cube Cake.

Alternatively, pay S$128 per person for a table at the Terrace (outdoor dining). You will get a beer tasting paddle or a glass of house wine, along with a charcuterie board, fries, and a choice between the chilli soft shell crab brioche roll with avocado, or wagyu beef Brewery Burger. If you just want to enjoy the fireworks and view without dining, the cover charge is S$33 per walk-in guest - you will also receive 0.3L of beer or a glass of house pour wine.
