This December, join award-winning Danish Chef Henrik Jyrk at the peaks of Mount Faber for a once-in-a-lifetime Nordic dinner that’ll make this a Christmas you won’t forget.
Chef Henrik is one of Denmark’s most accomplished chefs, and for 9 nights only from 3 – 11 Dec 2022, he’ll be presenting an exclusive 6-course Chef’s Menu amidst the gorgeous panoramic view at Mount Faber Peak.
Chef Henrik is one of the most prominent figures in Copenhagen’s culinary scene. He’s appeared on MasterChef Denmark as a two-time guest judge; worked in world-renowned restaurants including three Michelin-starred Atelier Crenn; and won plenty of cooking competitions, including Denmark’s largest national cooking competition, “Sol Over Gudhjem” in 2016 and 2017.
This marks Chef Henrik’s first-ever overseas culinary showcase, so you can bet we’re incredibly stoked to see what he has to offer. Not only is he bringing a 4-man culinary team from Denmark including Martin Wulffeld, the current Front of House Manager at two-Michelin-starred Alchemist, he’s also partnered with local ceramic artist Ng Yang Ce to create a bespoke line of ceramic dinnerware just for this collaboration!
The 6-course Chef’s Menu will take place during dinner (6pm to 11pm) from 3 – 11 Dec 2022 and present an exclusive menu centered around Chef Henrik’s signature Nordic-Asian cuisine.
Highlights of the menu include masterfully crafted Økologisk Tværreb, which is organic free-range beef short-rib that has been braised for 18 hours. This main course is accompanied by a medley of sour umeboshi, and is elevated by black label caviar from Danish producer Rossini.
A textural delight from start to end, another course to look forward to is the Kartofler Og Kaviar, a potato clam salad that features confit potatoes slow-cooked in butter and kombu, and topped with steamed clams, oscietra caviar, salted herbs, and sansho pepper foam.
This 6-course Chef’s Menu is priced at S$198++ per person (food only), while a wine pairing option is available at an additional S$98++ (standard)/S$168++ (premium).
Though Chef Henrik will be departing after 9 nights, you can still experience his exquisite Nordic-Asian cuisine through two additional festive dinner menus, which will be available from 12 Dec 2022 onwards.
Available from 12 Dec 2022 – 31 Mar 2023, the first 4-course Nordic-Asian Menu will be presented at Dusk Restaurant & Bar and includes Makrel, tender fish in clam dashi; Andesteg, a roasted duck breast paired with sweet Danish cherries; and Rødgrød Med Fløde, a berry compote dessert with meringue and ice cream.
The second menu allows you to dine in the skies— literally! The Cable Car Sky Dining Menu, titled ‘Nordic Dining In The Skies’, runs from 12 Dec 2022 – 31 Mar 2023. This 60-minute dinner adventure offers the best panoramic views in town and allows you to dine in the privacy of your own cable car cabin as you travel from Mount Faber Peak to Sentosa Island and back.
It is here that you can indulge in this exclusive 4-course menu, which includes dishes such as Koldrøget laks, artisanal smoked salmon from Denmark and for your main course, choose between Andeconfitering, which is sous-vide duck leg or Pandestegte kammuslinger, which is pan-fried scallops cooked in a brown butter vinaigrette sauce.
The 4-course Nordic-Asian Menu is priced from S$108++ per person, while the Nordic Dining In The Skies Menu requires a minimum of two to dine and costs S$144++ per person. Note that special prices apply if you’d like to dine on New Year’s Eve.
