One-Michelin-starred Cantonese restaurant Summer Palace offers eight yu sheng options for your feasting this year. They range from the classic smoked salmon ($88) to unique combinations such as bird’s nest and pear ($138) and marinated Hokkigai glam with jellyfish ($98). There’s even a vegetarian version of purple cauliflower with crunchy lily bulbs ($88). Customise your toppings with additional accompaniments such as poached lobster and salted egg yolk crispy fish skin (from $10 per portion). To usher in the Year of the Pig, Summer Palace’s executive Chinese chef Liu Ching Hai crafted a special themed platter dotted with eight cute white chocolate piglets. The chef also tweaks the plum sauce so that it’s well balanced and less sweet. Available 25 Jan to 19 Feb.

Hai Tien Lo at Pan Pacific Singapore presents six yu sheng variations this festive period. They include the ‘Blossoming Treasures Yu Sheng’ luxed up with sliced abalone, crispy barbecued suckling pig, deep-fried crab meat sticks and black truffle (from $138) and the ‘Prosperity Yu Sheng’ with baby
abalone, shredded dried scallops and a scattering of crispy silver whitebait (from $90). The restaurant’s other yu sheng creations (priced between $38 and $198 per platter) are available in both small and large portions for dine-in and takeaway, from 21 January to 19 February 2019.

Intercontinental Singapore’s executive chef Eric Neo and his team have crafted a new ‘Prosperity Yu Sheng’ ($138, large) for the Year of the Pig. The platter comprises plump Hokkaido scallops, salmon, crispy pork crackling, and a drizzling of apple sauce dressing and aromatic shallot oil. There’s also the ‘Abundance Yu Sheng’ with luxurious lobster, abalone and salmon at $168 (large). Other sizes are available too. The succulent sliced hamachi, specially flown in from Japan, and salmon roe are served atop a colourful and crunchy ensemble of pomelo, yam, sweet potato, white radish, carrot and pickled ginger. If you’re looking for something different, there’s the Auspicious Abundance Yu Sheng. Tossed in it is a bountiful feast of purple and white cabbage, green and white radish, all basked in the crowning glory of freshly-flown in yabbies and Parma ham, presented with kaffir leaves, fresh pomelo, pickled ginger, zesty lime and finished with home-made plum sauce. This glorious platter marks the start of the feast, welcoming a year filled with health, luck, harmony, and abundance to those around the table. Available for dine-in until 19 February.

Fullerton’s fine dining Cantonese restaurant Jade is preparing a spectacular feast this year. The Gold Rush Yu Sheng features slivers of lobster, Norwegian salmon and Australian abalone partnered with pink and white radish, beetroot, cucumber, carrots, capsicum and Chinese parsley. To elevate the composition even further, the creative chef scatters cubes of gleaming Champagne jelly with edible gold leaf, and livens up the platter with a signature sweet and tangy honey pineapple sauce. The beautifully plated Special Piggy Edition Gold Rush Yu Sheng with salmon is priced at $388 (for 10 persons); orders should be made one day in advance. The prices of the other yu sheng platters range based on the ingredients ordered.

For something luxe, the live Australian lobster, salmon roe and abalone yu sheng ($588 for 10 persons) will impress. If you like Japanese fish, opt for the fresh toro yu sheng (small S$198; large S$388) or fresh hamachi (Japanese yellowtail) yu sheng (small S$78; large S$138). Advance reservations are recommended.

This year, Szechuan Court’s Prosperity Yu Sheng platter comes with a superb combo of vegetables crowned with generous portions of snow crab, sashimi salmon, or abalone (priced from $58 to $98 depending on your preferred ingredient). Newly opened last month, this modern Asian restaurant shines the spotlight on unique creations by Hong Kong’s well-known Chef Alvin Leung. For Chinese New Year, the chef has crafted his version of Prosperity Yu Sheng brimming with air-flown hamachi, fresh fruits ad julienned vegetables. The yu sheng dressed with a lively housemade yuzu orange vinaigrette is given extra textural contrast with toasted peanuts, white sesame, and crispy you tiao. The platter is priced at $98 (small) and $168 (large). If you prefer to go for traditional flavours, order the Classic Prosperity Yu Sheng with smoked Norwegian salmon at $168. Before the big toss, customise your auspicious dish with crispy fish skin at $18, sliced Hokkaido scallop ($18) and sliced abalone ($38).
