This year, the talented Chef Pang Kok Keong of Antoinette has rolled out two new log cake flavours: the Foret Vert (Green Forest) is made of delicate matcha mousse layered with kirsch crème Chantilly, matcha sponge cake, milk chocolate parfait and studded with dark cherries. To elevate it further, this pretty green-coloured creation is festooned with chocolate decorations ($45 for small or $90 for large). The chef has also introduced his version of red velvet log cake. Dubbed Rouge, the cake is composed of Red Velvet cheese cake partnered with dark
chocolate cake laced with dark rum, and almond crumble ($40 for small and $80 for large).

This tiny patisserie by baker Christine Ng is presenting a new low GI flourless Valrhona dark chocolate log ($86) made with 100% organic low GI sugar and rich chocolate sponge. There’s also the light and moist Japanese yuzu white chocolate chiffon log cake, brightened with Japanese yuzu zest, and frosted with a creamy yuzu-infused white chocolate ganache. They may look like typical Swiss rolls but thanks to the natural ingredients used, the flavours stand out from many other mass-produced cakes.
