InterContinental Singapore invites you to celebrate Christmas with childlike wonder and excitement. This year’s new flavour, the Rocking Horse Yule Log ($68), is playfully adorned with chocolate rocking horse cutouts, while Irish coffee-flavoured mousseline puts an adult spin on the other components of hazelnut sponge, homemade orange confit and sea salt caramel. Memories of childhood ($70) takes you back to the good old days sans that sugar high – sugar-free chocolate mousse fuses elegantly with vanilla pear compote, passion fruit jelly, and cacao crumble. The pastry team has also up the game with their chocolate creations – check out the chocolate cutout of two little kids playing on a see-saw atop the log cake.

For the white as snow Winter Chalet log cake ($88), zesty flavours abound with tangerine jelly, orange and yuzu curd incorporated into yoghurt ivory chocolate mousse. Aside from log cakes, the pastry chefs have crafted a beautiful “Christmas package” attached with a “letter to Santa”. This year, the talented Chef Pang Kok Keong of Antoinette has rolled out two new log cake flavours: the Foret Vert (Green Forest) is made of delicate matcha mousse layered with kirsch crème Chantilly, matcha sponge cake, milk chocolate parfait and studded with dark cherries. To elevate it further, this pretty green-coloured creation is festooned with chocolate decorations ($45 for small or $90 for large). The chef has also introduced his version of red velvet log cake. Dubbed Rouge, the cake is composed of Red Velvet cheese cake partnered with dark chocolate cake laced with dark rum, and almond crumble ($40 for small and $80 for large).

Simple Indulgence Patisserie
This tiny patisserie by baker Christine Ng is presenting a new low GI flourless Valrhona dark chocolate log ($86) made with 100% organic low GI sugar and rich chocolate sponge. There’s also the light and moist Japanese yuzu white chocolate chiffon log cake, brightened with Japanese yuzu zest, and frosted with a creamy yuzu-infused white chocolate ganache. They may look like typical Swiss rolls but thanks to the natural ingredients used, the flavours stand out from many other mass-produced cakes.
