For an ultra luxe brunch this Easter, make a booking at St Regis Singapore’s Brasserie Les Saveurs. The Easter Day Champagne Brunch offers guests a complimentary hour of aperitifs at Astor Bar from 11am to 12pm. And from 12pm to 3pm, feast on a superb spread at the brasserie, topped with Ruinart champagne and live music. Start with amuse bouche of superior oscietra caviar with confit yolk, smoked potato puree, sour cream and crispy leeks, followed by pass-around canapes such as spiced heirloom carrot veloute with beurre noisette cream as well as truffle brie cones.

The live station is laden with fresh seafood and cold appetisers including Japanese sea urchin with Alaskan king crab salad. There’s also the Easter must-have of slow roasted lamb leg with garlic and rosemary sauce. Prepared fresh to order are main courses such as roasted chicken breast with foie gras, crispy truffled chicken skin, smoked potato puree, garlic broccolini and truffle split jus, and baked Pacific cod with black mussels, pernod and saffron emulsion and dill oil. Don’t forget to save room for the dessert buffet. The free-flow champagne starts from $228 per person with ‘R’ de Ruinart Brut NV, wines, beers and juices.

At Fullerton Bay Hotel, the Easter brunch at The Clifford Pier kicks off from 12 pm to 3pm. For one day only, the Easter Edition Sunday Brunch replaces the regular Dim Sum Brunch. From the 16 stations, you’ll find popular brunch staples such as slow-roasted prime rib, whole confit salmon with traditional condiments, fresh Boston lobster and seafood on ice, and many more. Tuck into Easter favourites such as “Torta Pasqualina”, a traditional Italian Easter Ricotta and Spinach Tart, as well as mini hot cross flans. The brunch is priced at $138 (without alcohol), $158 with free-flowing Veuve Clicquot champagne, wines, beers and access to the Gin Parlour, and $49 for kids six to 11.

Over at La Brasserie, the La Famille Brunch from 12.30pm to 4pm rolls out fresh seafood and premium meats including apple wood-smoked salmon, whole Norwegian salmon confit with fish roe and avruga caviar, and slow-roasted rib eye. Signature dishes prepared a la minute include Provencal herb-crusted rack of lamb and crispy duck leg confit. Round off with mini tarts, cakes, and puddings.

La Brasserie’s brunch is priced at $128 (without alcohol), $168 with free-flow champagne, wines, beers and access to the Gin Parlour and digestifs station. The brunch is $48 for children six to 1. Look out too for The Fullerton Bay’s annual Easter Egg Hunt from 3pm at The Floating Pods, with giveaways for kids who collect the most eggs.

The ever-popular Basilico presents an outstanding Easter brunch this year with a host of boldly flavoured dishes. You can’t go wrong with the fresh pasta station loaded with hearty handmade tortellacci stuffed with braised duck, Castelmagno cheese, porcini mushrooms and served with black truffle sauce as well as Italian Easter Cannelloni stuffed with Swiss chard and Sicilian ricotta in Pachino cherry tomato crudaiola sauce. But pace yourself for other festive highlights such as the oven-baked New Zealand lamb rack crusted with pistachios and Chanterelle mushrooms, and roasted Sardinian porchetta with purple potatoes and Romanesco broccolli.

The dessert table brims with a bevy of tempting sweets including hot cross buns, chocolate caramel pecan fudge brownies, Madagascan chocolate raspberry tarts, tiramisu, and Easter egg almond shortbread. Basilico’s brunch from 12 to 3pm is priced at $148 (buffet only), $192 (free-flow prosecco and wine) and $218 (free flow champagne and wine). The meal is priced at $74 for kids five to 12 years old.

Kids can enjoy themselves at the supervised Kiddies Playland, complete with a bouncy castle, arts & crafts, face painting, balloon sculpting and other fun activities such as an Easter Egg Hunt and a special visit from the Easter Bunny.

For something a little different, make your way to Sentosa Island’s newcomer, Native Kitchen. The restaurant will present an Easter Islander Brunch from 12 to 3pm on 21 April. Enjoy a communal-style four-course semi-buffet comprising three sharing salads, seafood platter of steamed prawns, king crab, mussels, salmon gravlax, a BBQ board of sliders, Jamaican chicken, grilled chorizo, grilled barramundi, jumbo satay skewers and a range of side dishes.

The special occasion will put you in the mood for decadent sweet treats. Look out for the dessert table with a six-tier chocolate fountain. The buffet with free-flow soft drinks, juices, coffee and tea is priced at $78. Diners can choose to top up $28 for free-flow prosecco, beer and wine. A pre-deposit payment of $20 per person is required upon confirmation of bookings.

This family-friendly restaurant also offers a buffet spread especially for kids. After their meal, they can also look forward to various fun activities including an Easter egg hunt, a bouncy castle, balloon sculpting, face-painting, and movie screenings. Every child will also receive an exclusive Bunny soft toy.

At Sofitel Singapore City Centre, Easter revelry comes in the form of an extensive buffet selection of French delicacies and local Chinese favourites, plus lively activities for kids. The Easter carvery showcases roasted lamb partnered with sweet caramelised onions, and massive Black Angus beef tomahawks served with bordelaise jus and a choice of mustards. The feast also includes sautéed Atlantic Saint Jacques scallops; French duck pan-seared with figs; and slow-cooked spiced wagyu beef briskets.

For Chinese creations, you can expect duck leg confit tossed with chicken floss; deep-fried Barramundi coated in black bean sauce; and signature Shanghai noodles with shredded chicken in specialty broth. At the open kitchen, succulent char-grilled rock lobster, and Kurobuta pork yakitor are fired up. Hop over to the Easter chocolate egg station, where the chef will prepare a festive dessert with a vanilla mousse base and your choice of condiments before topping it off with passionfruit espuma. Other sweet treats include Grand Marnier French Crêpes Suzette with vanilla ice cream and croissant waffles. The brunch is from 12.30pm to 3.30pm. Prices start from $128 with free-flow juices to $178 with free-flow champagne, wines and beers. Children below 12 pay $68.

Kids will be entertained throughout the afternoon at the dedicated Kids’ Activity Lounge which has its own selection of child-friendly cuisine. The Easter Bunny will also be making an appearance, and there’s an egg hunt to boot.
